Harmony....because during the middle ages people started fasting on Ash Wednesday which lasted for 40 days till Easter. . and because there was no way to store the food, it was brought to the middle of the village and everyone ate up what they could the day before Ash Wednesday in hopes of making them fat...you get the idea. Even people living away from towns and villages would eat their food so it wouldn't spoil. Hence FAT Tuesday ;D

The Mardi Gras season starts on the day of Epiphany which is when the Three Wise men met the baby Jesus. They brought gifts of Gold, Frankincense and Myrrh which is what some believe the three colors of Mardi Gras represent. Gold is for power, purple is for Justice and green is for Faith.
