Dressing is — FINALLY — mixed and in the refrigerator! It will go in the oven around noon tomorrow.
I say FINALLY because this night had been one mess after another.
— Realized my shortening (for greasing cornbread skillet) was old and looked yucky... called dmom to ask if butter would work just as well. She said yes. I said good because I had put on purple plaid pajama pants and a red Atlanta Braves T-shirt and I was NOT leaving the house again.
Famous last words.
— cut up celery and boiled eggs. Mixed them together before cutting up onion.
— realized celery and onion are supposed to be simmered together till tender. Can’t exaccly simmer boiled eggs, can you?
— threw that batch out.
— boiled more eggs, chopped more celery, chopped onion
— simmered celery and onion
— scorched celery and onion
— realized I had thrown away the other half of the onion
— chopped the third batch of celery to make sure there was enough
— called ddil to see if she had onion — she didn’t
— got dressed in uncomfortable too-right pants and sweater again, went to Wmart
— home, chopped onion...
FINALLY got this stuff DONE.
I have 4 mixing bowls and 4 pans to wash now, including the one that may be ruined forever.
Tomorrow, I will heat the dressing, cream-style corn, and rolls.
