Sounds good OKay. I think I'd just add dried mushroom to casseroles to get around the soaking problem. Mind you - I think I have tossed them in the past because they got so old.

I know mushrooms are a vegetable, but I also thought they were a protein. I have a vegetarian friend who uses them in sandwich spreads in lieu of meat.
