I have been struggling with eating badly (because I don't have a plan = over-goaling and perfectionist thinking) trying to remember I am not a chef in a restaurant. (I try to cook like a professional chef which means it's too much prep and not enough time)
I have to get a hold of this again. Maybe do only one day of fancy cooking every so often and have simple healthy low meat dinners (or no meat) every day.
I bought an instant pot and I am starting to use it on long cook veggies etc.
