Horseradish Roast Beef Special

HORSERADISH SPREAD
1/2 cup dairy sour cream
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon country-style Dijon mustard
1 teaspoon prepared horseradish

SANDWICH
1/4 cup butter; softened
1/2 teaspoon garlic; minced
8 slices sourdough bread
12 slices roast beef
8 slices ripe tomato
12 slices cucumber

In small bowl stir together all spread ingredients.

In small bowl stir together butter and garlic.

Spread 1 side of each slice of bread with garlic butter. Place on cookie
sheet. Broil 5 to 6" from heat for 3 to 4 minutes or until bread is
toasted.

To assemble each sandwich layer 1 slice bread with 3 slices roast beef, 2
slices tomato and 3 slices cucumber. Spoon about 2 tablespoons spread over
cucumbers. Top with 1 slice bread.

Tortilla Pinwheels

1/2 cup sour cream
1 oz. cream cheese, softened
1/4 package Ranch dressing mix
2 flour tortillas
broccoli, chopped
cauliflower, chopped
bacon, fried and crumbled
shredded cheese

Mix sour cream, cream cheese and dip mix. Spread over tortillas.

Top with broccoli, cauliflower, crumbled bacon and shredded cheese. Roll up and chill for several hours.

Slice 1/2″ thick.

Note: Sometimes instead of bacon I use grated carrots. I have also used pea pods. I would cut them in 1/2" slices if using them for appetizer which was the original recipe. Instead I don't cut them. I wrap them in plastic wrap individually so dniece#2 can grab and go or I can just grab one for lunch.

MOCK TUNA SALAD

I have a new favorite sandwich filling to make as an alternative to tuna salad or egg salad --

Drain a can of garbanzo beans / chick peas. Mash them with a fork or potato masher to keep some of the texture -- although if I were in a hurry, I'd chop them in a food processor. Mix in some mayonnaise.

You could add in other finely chopped veggies to taste. Of course, you could start from scratch with dry beans. You could even make it totally vegan by using a creamy dressing other than real mayonnaise.

I haven't tried Miracle Whip yet but I will because here in Iowa, both tuna salad and egg salad are made with Miracle Whip, not mayo. That's just the way we roll!

So far, though, I've only had the straight chick peas (from a can) & mayo with a slice of Swiss cheese, in a thin wheat bun and heated like a tuna melt, or in a tortilla and toasted like a quesadilla. Simple and yummy.

I love garbanzo beans so will be trying this very soon, Booksaver. Been a long time since anything was posted over here. Think we need to give a challenge to our villagers to maybe post one recipe that's a sure thing in their repertoire. Last post for sandwiches was 2010!
