Peach Mango Salsa
1 cup chopped tomatoes, seeded
1 sm mango, seeded and chopped
¾ c peaches, chopped
½ med red bell pepper, finely chopped
½ sm onion, finely chopped
¼ c fresh cilantro, chopped
1 (optional we didn’t use) chopped jalapeno chile
Juice of 1 lime
1 tbl red wine vinegar
1 tbl honey
1 tbl orange juice
1/8 tsp. salt
Mix all together and let sit about ½ hour to an hour in refridge.
Serve with tortilla chips (we like tortillas better) or take 3 large whole wheat pita cut into 8 wedges each .
Coat lightly with cooking spray and sprinkle with 1 tsp. garlic and herb seasoning such as Mrs. Dash bake at 350 deg. For 5 or 6 minutes until edges start to brown cool
