Beef & Cream Cheese Spread

1 package buddig corned beef; shredded
1 8 ounce package cream cheese; softened
1 teaspoon lemon juice
2 tablespoons mayonnaise
2 green onions; chopped

Combine cream cheese, lemon juice, and mayonnaise. Add corned beef and onions and blend.

Make a day ahead.

Serve with cocktail rye or crackers.

Peach Mango Salsa

Peach Mango Salsa

1 cup chopped tomatoes, seeded
1 sm mango, seeded and chopped
¾ c peaches, chopped
½ med red bell pepper, finely chopped
½ sm onion, finely chopped
¼ c fresh cilantro, chopped
1 (optional we didn’t use) chopped jalapeno chile
Juice of 1 lime
1 tbl red wine vinegar
1 tbl honey
1 tbl orange juice
1/8 tsp. salt

Mix all together and let sit about ½ hour to an hour in refridge.

Serve with tortilla chips (we like tortillas better) or take 3 large whole wheat pita cut into 8 wedges each .
Coat lightly with cooking spray and sprinkle with 1 tsp. garlic and herb seasoning such as Mrs. Dash bake at 350 deg. For 5 or 6 minutes until edges start to brown cool

Buddig Pin Wheels

Buddig Pin Wheels

1 3 ounce package cream cheese; softened
1 tablespoon onion; grated
1 teaspoon horseradish
1 dash Worcestershire sauce
1 package ham; sliced

Blend cream cheese, onion, horseradish, and Worcestershire sauce until of spreading consistency. Carefully separate slices of beef or ham and spread with cheese mixture. Roll as for jellyroll and fasten with toothpicks.

Chill. Just before serving, slice into 1/2 inch slices.

Canadian Bacon Roll-ups

Canadian Bacon Roll-ups

1/4 pound canadian bacon; sliced thin
6 small green onions
1 8 ounce package cream cheese; softened

Take one slice of canadian bacon, lay flat and spread with cream cheese.

Roll this around one green onion. Slice into 1/2" pieces.

Variation: instead of green onion - sweet pickle.

Cantonese Meatballs

Cantonese Meatballs

1 20 ounce can pineapple chunks; in syrup
3 tablespoons brown sugar
5 tablespoons teriyaki; divided
1 tablespoon vinegar
1 tablespoon catsup
1 pounds ground round
2 tablespoons instant minced onion
2 tablespoons cornstarch
1/4 cup water

Drain pineapple; reserve syrup.

Combine reserved syrup, brown sugar, 3 tablespoons teriyaki sauce, vinegar and catsup; set aside.

Mix beef with remaining 2 tablespoons teriyaki sauce and onion; shape into tiny meatballs.

Brown meatballs in large skillet; drain off excess fat.

Pour syrup mixture over meatballs; simmer 10 minutes, stirring
occasionally.

Dissolve cornstarch in water; stir into skillet with pineapple. Cook and stir until sauce thickens and pineapple is heated through.

Cheese-Stuffed Pecans

Cheese-Stuffed Pecans

1 cup Gouda cheese; finely shredded
3 tablespoons sour cream
40 large pecan halves

Bring shredded cheese to room temperature in a medium mixing bowl (allow 30 to 60 minutes). Add sour cream. Beat with an electric mixer till combine and mixture is creamy. Using a scant teaspoon for each, pipe or mound cheese mixture onto the flat side of half of the pecans. Top with remaining pecans, flat side down.

Classic Cream Cheese-Salsa Spread

Classic Cream Cheese-Salsa Spread

1 8 ounce package cream cheese
1 jar salsa
1 garnish cilantro; chopped

Place cream cheese on rimmed plate; let stand at room temperature about 30 minutes to soften. Pour salsa over and around cream cheese. Garnish with cilantro, if desired. Serve with vegetable dippers, crackers, and chips.

Variation: Substitute cocktail sauce for salsa. Top with tiny shrimp. Substitute parsley chopped for cilantro.

Can substitute crab for shrimp.

Holiday Meatballs

Holiday Meatballs

1 1/2 pounds ground round
2/3 cup bread crumbs
1 egg; beaten
1/4 cup water
3 tablespoons onion; minced
1 clove garlic; minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil
1 cup heinz chill sauce
1 cup grape jelly

Combine first 8 ingredients. Form into 60 bite-sized meatballs using
rounded teaspoon for each. Place in shallow baking pan or jellyroll pan brushed with oil. Bake in 450°F oven 15 minutes or until cooked through.

Meanwhile, in small saucepan, combine chili sauce and grape jelly. Heat until jelly is melted. Place well-drained meatballs in serving dish. Pour chili sauce mixture over; stir gently to coat. Serve warm.

Variation: I substitute currant jelly for grape jelly. I have also substituted sliced smoked or kielbasa sausage for meatballs.

I serve in a mini crockpot.

4 tablespoons butter
1 tablespoon Worcestershire sauce
2 teaspoons Tabasco sauce
1 teaspoon salt
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 pound pecans; or walnuts

In a large pan melt butter and add remaining ingredients except nuts. Stir until well blended. Add nuts and toss to coat. Cook covered over low hea tfor 20 minutes. Stir occasionally. Drain on brown paper. Store in an air-tight container.

Popeye's Favorite Snack

1 10 ounce package spinach; frozen
1 cup stuffing mix; crushed
1/3 cup parmesan cheese
3 single eggs; beaten
1 single onion; chopped
4 tablespoon butter; melted

Preheat oven to 350. Cook spinach according to package directions and drain well. Combine spinach with remaining ingredients, mixing well. Roll into walnut-sized balls. Bake at 350 on ungreased cookie sheet for 20 minutes.

These can be frozen before cooking. Without thawing, bake at 350 for 30 minutes. Serve hot or at room temperature
