Rumaki

12 ounces chicken livers; cut in half
1/4 cup dry sherry
1/4 cup soy sauce
2 tablespoons oil
2 tablespoons brown sugar
1/4 teaspoon garlic powder
1/8 teaspoon ground ginger
1 8 ounce can sliced water chestnuts; drained
12 slices bacon

Combine sherry, soy sauce, oil, brown sugar, garlic powder, and ginger in a medium bowl. Add livers. Cover and chill for 4 to 24 hours. Cut bacon slices in half crosswise. Drain livers. Wrap bacon piece around a liver half and a water chestnut slice. Secure with a toothpick. Place on a lightly greased broiler pan. Broil 4 inches from heat for 8 to 10 minutes or until livers are no longer pink, turning once halfway through cooking.

Serve hot.

I make ahead through inserting toothpick and then continue from placing on broiler pan.

Shrimp Mold

Shrimp Mold

8 ounces cream cheese; softened
1 cup mayonnaise
10 ounce can tomato soup
1 envelope gelatin
1/3 cup water
1/2 teaspoon salt
1 medium onion; chopped
2 stalks celery; chopped
2 cans shrimp; 12 ounce fresh

In saucepan combine soup, water and gelatin. Heat until gelatin is
dissolved. (Do not boil.) Add salt and cool. In a small bowl combine cream cheese and mayonnaise. Fold cream cheese into soup mixture. Add onion and celery. Put in a mold lightly coated with mayonnaise. Refrigerate overnight. Unmold. Serve with crackers and vegetables.

Spinach Dip

Spinach Dip

1 10 ounce packages chopped spinach; thawed & squeezed dry
16 ounces sour cream
1 cup mayonnaise
1 package knorr's vegetable soup mix
8 ounces water chestnuts; drained & chopped
3 medium green onions; chopped

In medium bowl combine sour cream, mayonnaise, soup mix. Add water chestnuts, green onions and spinach. Chill at least 2 hours.

Serve in hollowed out Hawaiian bread. Serve with cubes of Hawaiian from middle plus cut up Hawaiian rolls.

The Original Chex Party Mix

The Original Chex Party Mix

6 tablespoons butter or margarine
2 tablespoons worcestershire sauce
1 1/2 teaspoons seasoned salt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
3 cups corn chex cereal
3 cups rice chex cereal
3 cups wheat chex cereal
1 cup mixed nuts
1 cup pretzels

Heat oven to 250 degrees F. Melt butter in large roasting pan in oven. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool. Store in airtight container.

Yield: 12 cups

Bacon Wrapped Bread Sticks

Bacon Wrapped Bread Sticks

1 cup grated parmesan
2 teaspoons garlic salt or powder
12 slices bacon
24 (4 1/2-inch) long sesame breadsticks (; 1 package)

Preheat oven to 350 degrees F.
In a mixing bowl, combine the Parmesan with garlic salt and set aside. Cut the bacon slices in half so they are approximately 5-inches long. Wrap each bread stick with 1 slice of bacon, starting at 1 end and ending at the other. Place wrapped bread sticks on a cookie sheet lined with parchment paper, and bake for 15 minutes or until bacon is browned. Remove from oven and immediately roll bread sticks in cheese mixture. Let cool and serve at room

Ham and Swiss Spirals

1 10 ounce package chopped spinach; thawed
1 cup butter; melted
2 tablespoons dijon mustard
1/2 teaspoon caraway seed
8 ounces ham; thinly sliced and chopped
8 ounces swiss cheese; shredded
16 sheets phyllo dough; thawed

Drain spinach until dry. Set aside. Using fork or whisk, combine butter, mustard, and 1/2 teaspoon caraway seed. Combine ham and shredded swiss cheese. Lightly brush one sheet of phyllo dough with some of the butter mixture. Place another sheet of phyllo dough on top of the first and brush with butter mixture. Repeat with two more sheets of phyllo, brushing each with butter. (Cover remaining phyllo with a damp cloth to prevent drying.)

Spread 1/4 of the ham and cheese mixture along one long side of phyllo stack and within 2 inches of ends. Top with 1/4 of the spinach. Fold in short sides. Roll up phyllo, starting with the long side nearest the filling. Place roll in a shallow baking pan. Repeat three more times. Brush rolls with remaining butter mixture; sprinkle with additional caraway seeds, if desired. Score with a sharp knife at 1 inch intervals, cutting just the outer layer of phyllo. Bake in a 350 oven for 20 to 25 minutes or until golden brown. Let cool 10 minutes. Slice and serve warm.

JusSue's Curried Turkey Balls

2 (3 ounce) packages cream cheese softened
2 tablespoons of orange marmalade
2 teaspoons of curry powder
3/4 teaspoon salt
1/4 teaspoon white pepper
3 cups finely chopped cooked turkey
3 tablespoons minced green onions
3 tablespoons minced celery
1 cup finely chopped macadamia nuts or almonds, toasted

Combined first 5 ingredients in a mixing bowl;
Beat at medium speed of an electric beater till smooth.
Stir in chicken, green onions, and celery.
Shape in one inch balls, and roll in nuts.
Chill up to 2 days or freeze up to 1 month...Defrost prior to serving.
Yield: 3 1/2 dozen

He also has rolled them in matzo meal and then fried jus enuf to warm/brown instead of the nuts...

JusSue's Sweet Turkey Balls

1 1/2 lb. diced (small) Turkey
1/2 Cup Parmesan Cheese
1 Cup Mashed Sweet Potato (cooked)
1 Cup Quick Oats

Preheat oven to 350 degrees.
Mix all the above ingredients in a large bowl.
Make 1" balls, place them on a non greased baking sheet and bake for 15 min. or until done.
Keep refrigerated in an air tight container.
Freeze any that won't be used within a couple of days

Fruit Salsa with Cinnamon Crisps

1 pint fresh strawberries, chopped
1 large banana, chopped
1 Red Delicious apple, chopped
1 kiwifruit, peeled and chopped
1/4 cup fresh lemon juice
1/4 cup sugar (can omit)
1/4 teaspoon ground nutmeg

1 1/4 teaspoons ground cinnamon, divided
4 (7 1/2-inch) flour tortillas
Vegetable cooking spray
2 tablespoons sugar or splenda

Combine first 4 ingredients. Stir together lemon juice, 1/4 cup sugar, nutmeg, and 1/2 teaspoon cinnamon; toss with fruit. Chill.

Cut each tortilla into eighths. Arrange pieces on baking sheets. Lightly coat with cooking spray. Combine remaining 3/4 teaspoon cinnamon and 2 tablespoons sugar/or splenda. Sprinkle over tortilla chips.

Bake at 350° for 6 to 8 minutes or until lightly browned. Serve with fruit salsa.

Yield: 4 servings

Mexican Caviar

1 can black eyed peas, rinsed and drained
1 can pinto beans, rinsed and drained
1 can black beans, rinsed and drained
1 can red beans, rinsed and drained
1 can white corn, drained
1 small jar pimentos, drained
1 medium onion, diced
1 cup celery, finely chopped
1 cup green pepper, finely chopped
2-3 jalapeno peppers, finely chopped - Less if you don't like it really hot - more if you do.

Mix the above ingredients and set aside.

Bring to a boil the following:
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon water
3/4 cup cider vinegar
1/2 cup vegetable oil (not olive)
1 cup sugar

Cool slightly, then pour over the bean mixture, mix to coat all, then refrigerate overnight. Serve with tortilla chips or Fritos scoops.
