Pumpkin Bread
A dense, moist bread. Made 4 loaves.

Sift together:
3 1/4 cup flour
2 teaspoons baking soda
3 Tablespoons pumpkin pie spice or an combo of nutmeg, cinnamon and cloves as you like.
1 1/2 teaspoons salt
3 cups sugar (I used 1 1/2 white and 1 1/2 brown)

Mix together and add to dry ingredients:
2 cups unsweetened/unspiced pumpkin
1 cup veggie oil
2/3 cup water
4 eggs

After mixed add 1 cup golden raisins and 1 cup pecans

Bake 350 for 1 hour or until toothpick comes out clean.

APPLESAUCE CAKE/ BREAD /MUFFINS

1/2 Cup Oil
3/4 Cup Dark Brown Sugar
1 Cup Applesauce
1-1/2 Cup Whole Wheat Flour
1 teas. Baking Soda
1 teas. Cinnamon
1/8 to 1/4 teas. Salt

Oil and flour 8 inch square baking pan
Cream the oil sugar together
Mix in applesauce and baking soda.
Add flour and cinnamon, blending thoroughly.

Bake 375 F (350 convection) for 25 minutes

Additions: Chopped Apple, Nuts, Raisins, Bananas, Apple Pie Spice, Mace,
Can be baked in 8x8 pan, Bread pan or muffin tin.
Makes a dense, moist cake/bread.

Easy Pumpkin Bread

One cake mix
1 Cup pumpkin [un-drained]
1 tea. Cinnamon
dash of allspice, cloves, pumpkin pie spice.

Mix well bake in bread pan 55 min. @ 350*
Use knife to loosen let stand a few min. to cool before removing from pan.
Freezes & travels well.
I like this for pot lucks or camping trips.

Mushroom Pizza (also called Mushroom Bread)

I searched for years to find this old recipe, first learned as a pizza at a Pampered Chef party, decades back, to demonstrate their baking stoneware. (Everyone loved it.) When I expanded my search to "breads" instead of pizza only, it came up online. Since that party, I've learned how good mushrooms (especially shitake variety) are for you. The Italian seasoning seems a little heavy to me - I don't think we were taught to use that much.

1 (8 ounce) packages refrigerated crescent dinner rolls
2 cups sliced fresh mushrooms
1 tablespoon butter, melted
1/4 cup grated parmesan cheese
1/4 cup dried Italian seasoning

Directions
Preheat oven to 375. Separate dough into triangles
*. Place on a pizza stone (or your choice of baking pan). Spread and roll out, lightly floured.
Toss mushrooms with melted butter to coat. Arrange over top of dough. Sprinkle with cheese and seasoning.
Bake 15-20 minute or until golden brown. Can be cut into squares with pizza cutter and served warm with spatula.

* The group at our "party" was taught to leave the crescent dough intact, crimp the perforations together slightly, and treat this as a rectangular pizza. I also wonder how it would be with more finely chopped mushrooms and rolled into crescents.

Skinny Muffin for one
healthy - good for reducing sugar in the diet

240 calories, zero sugar, 8 grams fiber

1/4 cup ground flax (flaxseed meal)
1 tsp baking powder
1 to 2 tsp cinnamon
1 tsp coconut oil
1 egg
stevia to taste

Directions
Mix all ingredients together in a mug or small microwavable cookware (melt the coconut oil in the mug first if you like and coat sides to slide out easily). Microwave for 50 seconds. Cool slightly and plop out onto a plate. Spread with butter, optional (36 calories for a pat).

Berries can be a part of this muffin if you add about 10 or 15 seconds to the cook time. Try arranging 6 raspberries over batter before baking, like pie decorations, and cut into 6 pretty wedges. (6 additional calories, 1 gram sugar)

We like to put our fav. Toppings on jiffy puzza dough on game day, yummy and saves us $.

Cloud Bread..

3 eggs separated
3 ozs cream cheese
1/4 tsp cream of tarter
I pkg stevia or spenda

Separate eggs.

Heat over to 300*. Spray Pam on cookie sheet

Place cream of tartar in bowl. Add egg whites. Beat till there are firm peaks.

In second bowl, mix cream cheese and egg yokes till well blended and smooth

Gently fold egg yoke mixture into egg whites. Blend well but not hard.

Drop large dollop of mixture on cookie sheet. I make mine the size of a hamburger bun and make six. Bake for 30 minutes.

** however watch the clouds after 20 minutes. Once they are brown around the edges and on the top they are done. Sometimes mine take 25 minutes or less.

Cool on cookie wire. When cold...Store in zip lock bag or plastic container. I keep mine in a plastic container in my refrigerator. You can lightly toast them for breakfast or buns, but watch them every carefully when you do this. If they get over toasted, the clouds will crumble.
