with d mom gone I have to cook each day and it has been a challenge coming up with meals, cooking and the dreaded clean as you go or clean after I have cooked.

yesterday I had left over chicken and made a tex mex casserole - salsa (tomatillo not sweet), brown rice, onion, corn, black beans, siracha, cheddar on half, crushed tortilla on top along with a good salad with tons of veggies. (extra salsa for serving and chopped cilantro for those that wanted it).

tonight:
- zucchini, onion and basil frittata (martha stewarts cooking school book)
- steamed french green beans w shallots sautéed (no good as they turned brown already :?
-Fougasse - Jacques Pepin had it on a show once - I took pizza dough that was defrosted - put oven on 400 degrees. stretched out dough to fit large pan - put on top of non stick foil (oiled it first, made cuts in it like fougasse - stretched some more - put olive oil on top and topped it with a bit of garlic, shallots, cut kalamata olives, kosher salt (light) and chopped small rosemary - looked fancy but super easy)
- a cucumber salad with french dijon dressing and parsley chopped)
-cut up veggies with a bit of humus - more veggies is the focus - small amount of bread and frittata is eaten that way.

tomorrow: fish with chilled composite butter with shallot, chives, parsley, lemon zest and cappers - first down the spinach, then the fish that is seasoned then thin slices of lemon, composite butter on top - seal in foil and cook in oven (martha stewart cooking school book). For dd younger she doesn't like chicken but I think I will do either tofu or something made up the same way.

tuesday: use one of Donal Skehans recipes - thinking falafel, red cabbage slaw thing he makes

kind of excited because I found already baked ginger tofu that is ready to use.

dh: bratwurst me: I have some of that non meat chicken stuff. 3 ounces
my cooking has seen better days - practice practice practice makes a better home cook.

dd younger got a cookbook from her sweet aunt for Alenia restaurant - my goodness it is way way way above my abilities
using nitrogen etc. https://www.exploretock.com/alinea/ Dinner at Alinea is a lot. It costs about for a "tasting from 175.00 to a dinner starting at $485 (without wine or tip) a person at least and you must pay ahead of time - who has that kind of money for a meal :shock: :shock: :shock: :shock: :lol: not me :D (i couldn't do it even if I could) The chef's story is inspirational - a cancer survivor at 33 http://www.cnn.com/2010/HEALTH/05/03/al ... index.html

spaghetti squash and bolognese for dh and for freezer (real) and for me: maybe beyond meat product.
nice salad I think.

made turkey soup (actually pre-made frozen turkey stock with pieces of chicken and veggies - no pasta) for tonight - I need to cut my carbs according to the dr.
will make jacques pepin cauliflower gribiche

lunch was tuna salad on ezekiel toast (too much mayonnaise used)
dh's low salt chips (I have to stop that)

tomorrow's plan
dinner: lentil salad and left over soup - fruit if I am hungry
lunch: i have a 3 ounce piece of chicken I cooked today with mexican seasonings - put aside for a taco (corn tortilla) with lots of veggies on top

I have been having left over soup ( made different ways) with the plant based meat substitute - not bad but chewy
soup was very filling and then had jello (I thought I bought low sugar one but bought the regular one)


dd older is flying in tomorrow - I will pick her up and go out to dinner

Breakfast - Cinnamon Oatmeal
Lunch - Frito Pies
Dinner - Grilled chicken, potato salad, baked beans

Sunday:
Breakfast - Breakfast burrito's
Lunch - Crawfish ettouffee
Dinner - Navy bean and ham soup

Monday:
Breakfast - Blueberry muffins
Lunch - Macaroni Salad
Dinner - Smothered sausage w/potatoes, brocolli

Tuesday:
Breakfast - Country egg scramble (hash browns, eggs, ham, onions, bell pepper)
Lunch - Ritz chicken, asparagus
Dinner - Stuffed Bell Peppers

Wednesday:

Breakfast - Pancakes
Lunch - Loaded Nacho's
Dinner - Fried pork chops, sweet potato fries

Thursday:

Breakfast - Crawfish omelets
Lunch - Chicken salad sandwiches, chips
Dinner - Seafood pasta

Friday:
Breakfast - French toast
Lunch - Smothered meatballs, rice, black eye peas
Dinner - Jambalaya, smothered squash & zucchini

tonight: falafel and red cabbage/carrot salad with siracha yogurt on the side for the falafel (vegetarian)
Tuesday: shepherd-less pie: lentils, mushrooms etc topped with sweet potato's instead of regular potatoes (vegetarian)

I think I would rather eat at d ejango's!!!!!

how do you make ritz chicken? and your navy bean soup?
My youngest loves Louisiana cooking - she wants to take lessons somewhere - do you know of a good cookbook or site that she can use as a reference

shepherd-less pie looks good - now I will see if it tastes good soon.

tomorrow: the beyond beef burgers, salad

sweet potato shepherd-less pie by donal skehan almost like a bourguignon flavour

I didn't use coconut oil

but here is the recipe as he had in his book Fresh

1 TBL coconut oil (i used olive oil)
1 large onion finely diced
1 large carrot " "
1 celery stick " "
1 garlic clove very finally chopped
3 time sprigs leaves picked
500 g chopped roughly mushrooms

melt coconut oil (I used olive oil because coconut oil sometimes changes the flavour) in a large pan over a medium high heat (i used medium so it didn't burn). add onion carrot, celery, garlic and thyme and cook for 4-5 minutes or until tender. Add mushrooms and cook for about 3 minutes. season with s/p

75ml red wine (lol I used 750 ml but it sure was tasty lol)
500 ml veg stock (I used chicken)
250 g quinoa (I used couscous) quinoa is too chewy
2 tis 400 gr puy or reg lentils drained and rinsed

Pour wine, stock, quinoa, lentils and simmer until reduced (about 15 min) into veggie sauté - I brought it to a boil and lowered it so it didn't burn
seasoned it at the end w salt and pepper to taste (thickened)

Stir in 250 g spinach until wilted to above (I left this out)

for topping:
2 large sweet potatoes peeled and diced
1 TBL coconut oil (used butter less for making mashed potatoes)
2 red onions finely sliced Used olive oil
(I did this differently as I made the sweet potatoes
like you would mashed potatoes. then season.

Steam or boil sweet potato until tender (easily pierced) drain

Melt half the coconut oil (I used olive) add the two red onions thinly sliced on a med high heat - then turn the head down low season with salt and pepper and cook gently stirring occasionally until softened and cartelized. (about 8 - 10 minutes)

turn oven on 200 c (I put it at 375 as my oven runs 20 to 25 degrees hotter)

stir mashed sweet potatoes with caramelized onions well

transfer the lentil mixture to an oven proof baking dish and put sweet potato mash over the top in dollops and spread evenly across the pie. Cook in oven about 25 minutes until lightly gold.

WE REALLY LIKED IT - DH EVEN LIKED IT - which is a miracle
we had a small salad with it/ grapes for a snack

dinner: me beyond meat burger (trying it) with lettuce, avocado, tomato, grilled onion - dh will definitely want something else

if I get hungry at night _ I have to figure it out because I am constantly numbing out on food at night.

toss left over Bolognese and spaghetti squash
toss left over leek and potato soup
freeze yesterdays dinner
make dressing
