gma, there's a lot of ways to make chicken thighs! Actually made them yesterday for mom and the kids while I was in town - peeled some potatoes and carrots, sliced them thinly, added salt and thyme and set some chicken thighs on top. More thyme, salt and a slice of butter on top of each chicken, pop it in the oven (well I used my little remoska, which keeps things nice and moist while also giving it a good broil, but for oven I'd bake it first covered and them give it some good hot roasting for crispy skin) and I was free to go while my family had a tasty dinner! Gotta admit I ate the leftover potatoes when I got home

Well, I'm at the NH. More phone calls took place -- and the hospice intake nurse wanted to meet me here to go over consent forms. I'll hand over POA documentation. I got here a little after 2 - and then saw a message that the nurse wouldn't be here until 2:45.
I'll return a phone call and then try to work more on exam prep -- but I didn't plan on these extra hours today.

Helia, I took a music class in college and The Moldau is the only thing I got out of it unfortunately. I was a bad student. It was every Saturday morning and I didn’t want to be there. My mistake. Hospice will be a help, more eyes on your mother and prescriptions should be easier to come by (like for that uti).
Trissie, I’d love to visit. The history of Europe is fascinating to me, and of course my family’s birthplace is of special interest. A group of Czechoslovakians settled here where I live and there is still a yearly festival based on their heritage although it’s become rather “vanilla” now with so many new people and the loss of the seniors with all of the information. Our senior home recently had a luncheon learning about the Czech Republic and served a meal. If I had known about it beforehand I would have tried to get an invitation. I did learn of a couple of people to reach out to who know the recipes and some of the history. One is running for mayor now though so super busy.
Gma, the loss of a loved one does leave an emptiness even while giving you the rest I’m sure you could use. It’s just hard.

We went out, I need to renew my drivers license. The nearest dmv is closed for a year for renovations so had to drive an hour away, waited maybe half an hour for my number to be called, then the system kicked me out, apparently they updated the system in 2022 and it kicks random people out (maybe everyone bc the woman before me had the same issue) so now I have an appointment to go back ugh. We went to lunch, walked around good will and found some cute stuff I decided I didn’t really need so put it back. Someone must have passed away and the family donated a ton of crystal items. Very pretty. I see a lot of china collections donated which makes me sad, I remember when people would collect their china and use it for special occasions. Now it ends up in these stores. Use the china. Family members don’t want it.
I was too stuffed to do our grocery shopping so passed on that. Went by my grandparents/aunt/uncle’s cemetery, my aunt’s birthday is this month, she’d be 100 this year if she had lived. She passed in 2019. I was certain we had put out new flowers in the spring but they still had the red and white ones I put there for Christmas/Valentines. Put that on my to do list along with the need to find something to clean the headstones. Uncle’s is over 100 years old, gma in the 1940s, gpa in the 1970s so could use some tlc and weeding.
Came home and crashed. Dh can eat these big heavy meals and keep going but they do me in. I didn’t even eat half but it was Mexican beans and rice (with a crunchy taco) and they settle in lol.
Now I need to head outside, walk the dogs, maybe weed some here.

trissie, that chicken thighs recipe sounds really yummy! I'll try it. Right now I have some very tender ones that I had just simmered the day before she died. I'll probably cook some rice and I have some brussels sprouts to put into my air fryer.
I'll make your recipe next time I thaw some out.

My son came home from his week of vacation. Together we buried Tutsi. I am relieved, but need to work on supporting mother in her grief and delusion. (Are you keeping her warm enough? Maybe she will start breathing again, have you checked if she's breathing?) I did cut a few locks of fur to give to mother. She told me that she held, petted, and talked to the stuffed toy my brother and I gave her for Mother's Day. What a comfort that is for her.
