trissie, you bring up a good point. My mother was a child of The Depression on a farm on the prairies, so she would have know all about preserving vegetables. She didn't pass it on us, as her fervent desire was to be a city girl. I can't imagine how disappointed, and possibly betrayed, she felt when her Montreal-born husband decided to move the family out to the prairies. She remained as city as possible under the circumstances. My generation and the ones following grew up in a time of food abundance where gardening and preserving was a niche hobby for those who had time to do it. Now that food prices are spiraling, we are looking at starting from scratch if we want to produce our own, not just applying skills that we already have.
I'm going to take a break to make breakfast.
