hi, I have been sick for a week (colds just love me!!!)

my cooking has been letting my dh feed me frozen macaroni and cheese and chicken soup. so I have to admit I am really looking forward to vegetables again.

we are going out to eat tonight for my d mom's bday so I have to get back on healthy eating. This weekend we have a big party where we go away for the weekend. I am going to make beef tenderloin, bring french bread, make a horseradish sauce and a basil aoili (a fancy way of saying basil mayo) with arugula and some sliced red onion. I also am bring a big bunch of strawberries and lay it on a tray of ice. I will also bring strawberry basil ice tea.

for the next day I have to bring salads: regular house salad, a beet goat cheese salad, and a tomato mozzarella salad with basil.

for breakfast: I will bring muffins I am making today, a coffee cake I am making today and freezing and oj and grapefruit juice, and buy croissants, bring brie, jam and butter, and yogurts, some mini box cereal and milk. bowls and spoons.

dd younger is making her shortbread cookies

Chicken soup sounds good. Ours will be chicken with rice. We have colds here, too, blessed, and it's a cold day. If DH doesn't like this plan, then we will have eggs and pancakes.

chicken soup and rice sounds delicious!!! feel better d Elly!

with me being sick and the kitchen being cleaned by eldest dd we made some important decisions regarding this weekend. 1. no one wants to come back to a dirty kitchen because we don't feel up to all the work. So we bought bruschetta and toasts from our local italian deli (mom and pop store) for appetizers, I ordered a tomato and mozzarella salad to be picked up tomorrow and bought breakfast items at a pastry shop in town. Yes I could have made it - but that would be for my ego and not for my families comfort. So it is with joy I can go to the gathering without the stress of dishes or a filthy counter.

Thanks, blessed. Hope you feel better too. Good decision about all the cooking...no need to stress yourself out. I know cooking is a pleasure when we feel like it, but this is your holiday too!

Nancy, grilling and sun sounds good, but we have cold and gusty winds here. Think I'll make a big pot of chili and maybe some cornbread. That will feed us for 2 meals!
