I think that you can cover them with water and keep them in the refrigerator for a day or 2, so you don't have to use them all at once.
PS I have a recipe for a cake that's like angel food but it uses both withes and yolks, separately. We call it sunshine cake. everyone likes it. When I need that many egg whites, I can get a pint (or quart) of pasturized egg whites in the egg section of my grocery store. It's really helpful when I am making my chocolate angel food cake recipe (I don't make a white angel food, as everyone here prefers the sunshine cake) Angel food cake mix works well and easy, but I bet your from scratch one is amazing!..

I'm tired but it's been a good and productive day. I got to all my goals, except for exam prep for payroll; I'll spend time on that tomorrow. Thursday is my most open day of the week.

to Lauralind, Peaches, L Ann, Gma, and trissie. --Who knew there were so many variations of vermicellli?!
I made great progress with Mom today. I managed to get an appointment for her to see a NP in the geriatric clinic 2 weeks from today. Much better than May of 2026.
They are connected to the geriatric neuroscience dept., so they can get her in there more quickly. I also got her dental paperwork to the dental clinic, paid the snail mail bills, got them in the mail, visited Mom and showed her the box of drinks/ snacks I made for her while I labelled things. I also prepped and taught my larger (and very socially energetic) combined class for 2 hours. *phew* I stopped by to see Fable, but only dd29 was there; dd26 didn't need a puppysitter after all and dh was planning to stop by tonight instead. He's there now. Got a homemade meal of panko-encrusted salmon (leftover), rice, and roasted butternut squash on the table. That's cleaned up and the dw is running. I think I'll relax tonight; I could work on exam prep but I'm tired and I should have time tomorrow. I didn't get in significant exercise today.

Thanks gma. Lots of uses for egg yolk I see. This angel food cake recipe said the boxed egg whites wouldn't work but who knows. It's actually been years since I made a homemade one. I should Google the sunshine cake. It looks good too.
Ds is getting me into new things. The rest of the pasta. Became ravioli. Phew I think he started cutting it at 430 and we ate at 730. But yum. Oh and an extra trip to the store once we figured out the filling. We used Italian sausage and mushroom and cream and parmesan. Yum. Worth the wait and kinda fun. So that pasta recipe was 3 shapes. Fettuccine and ravioli and whatever the bowtie is.
Oh and we have plants for the garden and the flower bed. And a few pots. I started weeding the garden so dh can till it.
In all it was a good day.

I don't use dried boxed egg whites (I can't find them anymore. Used to add some for extra volume long ago.) when I buy the pint in the refrigerator section, I add a couple fresh ones, and they always turn out ok.
I've never checked Google for sunshine cake. Our recipe is 70 years old!
