day before yesterday I made fish packets with lemon and caper butter and spinach and a really good risotto with lemon and herbs
yesterday... so so - chicken parm which eeeehhhh is all I can say and a salad and an so so okay pasta with parmesan and moz. plus basil

tonight sloppy joe's on kaiser rolls, cut up veggies before and dip, cut up fruit (after school for dd younger as she doesn't have a lunch at school... strawberry banana smoothies)

I'm going to thaw out some chicken pieces for tonight's meal.

I had to bring appetizers to a picnic and I made it simple 2 types of cheeses, sausage cut up, dijon honey mustard and pretzel 1 inch rolls.. very simple and small so that not much was left over.

I tried something last night that I thought turned out good.

Thawed 1 pound of chicken tenders (because that's what we happened to have in the freezer).
Sprinkled a little soy sauce on each piece and let them marinate for half an hour.
Put them in a skillet with a little coconut oil.
When they were cooked through and browned on both sides, I poured 1/2 cup of regular Coca Cola into the pan. Let it simmer until the Coke was reduced to almost nothing.
The combo of soy sauce & Coke made a tasty coating on the chicken.

Served with Romaine lettuce, mandarin orange slices, and sliced almonds.

yesterday our new adopted friend son cooked the steaks I bought and made a salad - very nice since I had another headache. I feel spoiled!!!

meat sauce cooking for tonights dinner, soon.. make tomato basil salad, I have garlic bread for the oven or the grill. and I need to get the artichokes trimmed. (I have never done that before so it will be a new adventure)

the snarfing up squad at my house tore through dinner last night. The young man who is now part of our family grabs and eats fast. Sweetest guy in the whole world. I think living at college so long makes that grab and eat thinking. I think I might have items ready in the kitchen and ask them to help set the table etc. to slow the process down. Last night I cut tomatoes on the cutting board and they never made it to the table.

tonight: italian sausage and brats on the grill, red/green peppers/onions sautéed, hot dog buns for those that want it, pasta salad and regular salad - grilled peaches

I have to clear the dining table off so we can use it for dining.
A tray in front of the TV is our norm these days.
We have been eating at diff. times.
T storms in the forecast have me thinking of alt. plans for our outside dining activity.

I know we have done the same here d nancy. it's been nice having more people here as it forces us to eat together and now that dd and ds adopted come home at the same time it has been nice.

Yesterday I said I couldn't make dinner for tonight and the kids said they could do it and the older dd and ds adopted laughed because at college they felt lucky just to have something in the fridge... many a night of nutella or chips and hot sauce was for dinner. now I understand the fast eating. lol I am trying to enjoy this time while I have it.

made zucchini provencal for the kids and bought a bag of Caesar salad - they are making eggplant park.
