I have had so many days of unexpected time away from home that I haven't had time for dinner. I struggle with change of plans and may have to plan simple if the regular doesn't work out.
tonight (fingers crossed) I plan on putting a roast with veggies in the oven -
Tomorrow my d aunt comes in and I am thinking of making a family dish with their help.

It's a cold day here. So we'll have meatloaf, potatoes, and green beans sauteed with an onion.

Yesterday I cooked 6 chicken breasts. We ate 2 last night with brown rice, green beans and gravy. Tonight I will make a pot of soup and add one or 2 more pieces. The rest will become chicken salad for tomorrow night. By then, we will be tired of chicken.

both of your cooking sounds wonderful!!! I especially love soup using chicken from the night before and I love hard squashes. mmm mmm good
tonight: trying pioneer woman's pork tenderloin, also making beef soup later for flieshnacka this friday or saturday
review of recipe... tenderloin was good, the veggies roasted could have used maybe a touch of an herb, the sauce way too sweet. thank good ness i put it on the side. (the sauce she had was fig jam 1 cup, 1 cup water and 1 T of vinegar... not a good combo for the port in my family's opinion and mine -
the cubed winter veggies carrots, parsnips, celeriac, with drizzling of olive oil and s/p roasted evenly and well. I did have to turn it every so often so it would not dry out.
cornmeal... no
over all..I might make the tenderloin again, the roasted veggies yes. the cornmeal no, the fig sauce definitely no. but that's our tastes.
what I want to learn from this: how to make good cornbread even though i am not crazy for it but I want to see how to do that better.
