DH was fine with the above mentioned supper! He overdid it at lunch (Chinese buffet, uh oh).

Tonight: Baked Tilapia, homemade oven fries, and coleslaw

I like to find this fish for half-price and throw it in the freezer.

Had a good crockpot meal last night that I want to remember, so will post it here.

Put 4 medium potatoes, a chopped bell pepper, and a handful of baby carrots in crockpot. Salt and pepper added. Placed 5 large chicken thighs on top. Added about a tbsp. of chili powder and some Italian seasoning to chicken. Added one-half cup of water. Cooked 6 hours on high. Delicious!

Will use the broth from this to cook brown rice tonight. Have more chicken that will go in oven, with broccoli on the side.

Came up with an easy soup for tonight's meal.

Brown one pound of ground turkey (or ground beef).
Drain grease and add one jar of spaghetti sauce plus one jar of water.
Then throw in a bag of frozen mixed vegetables.

Simmer for 1-2 hours (or less depending on how soft you want the veggies).

You could add garlic powder or chili powder, etc...but I didn't and it tastes great!

DH fixed a wonderful casserole for dinner with turkey roast leftovers. It was delicious! :!: :D :D

I cooked one chicken in the oven and one on the stove top for soup last weekend. Made stuffing to go with the baked one was great for a stay at home weekend. I thought the chicken soup would be great as I'd been fighting a bit of a sniffle. Home grown rosemary was a hit in these for some of the seasoning.

last night we made a frittata with sauté of onions and yellow and green zucchini, basil, chives, eggs, a bit of cream and then topped with herbed goat cheese and parmesan (broiled), dd's salad

this morning I made a apple cake with extra vanilla and apple liquor

last night I made a tortilla soup with pasilla chili peppers, roasted tomatoes and sauteed onions. it was really good. surprised! so adding it to our regulars
dd made the other day a great dressing for her dandelion salad.. we all agreed we didn't care for the dandelions as much but thought arugula, black seeded simpson or spinach salad would be better.

tonight: Mexican hay stacks: brown rice, taco seasoned meat, avocado, mango, cilantro, red onion
flan

today: make apple coffeecake muffins for breakfast tomorrow :arrow:
