Last night did older stopped by and we went for dinner out - I was exhausted - I dislike spending the money

I finally made the plablano enchiladas - so good - some were vegetarian - some. Left over chicken

Today is chicken Parmesan- super easy - I have the butcher cut a chicken breast in half and pound it flat - the bread crumbs have s/p dried basil and grated Parmesan - dip the chicken in the bread crumb mix - a little oil in the pan and brown a bit on both sides - oven at 375 - put pan toss chicken on sheet pan - Poe some canned tomatoe sauce add mozzarella and a bit of garlic powder and cook for the cheese to melt

Green beans w scallions

Salad w Parmesan crisp

Lunch - I have per cooked lentils - so lentil salad and carrot ginger soup

Last night I defrosted pizza dough and girls made pizza for themselv s

Tonight pear and parsnip au gratin - new recipe - it's Bosc pears and chopped parsnips w sour cream orange zest ginger zest s/p and eggs - I shall see if it's worth it
Defrosted pot roast and gravy I made a couple weeks ago

Wednesday
Need to make enchilada Insides bake enchiladas - we go to d mils tomorrow and bring dinner
- vegetarian for Wednesday also want to make salad for all of us
Also make lentil salad for Wednesday lunch I love lentils that I ina Garden makes

We went out for lunch so dinner turned into whatever leftovers are in the freezer

Friday: make for Saturday as I won't b home - I was going to make waffles but the mixture has to sit overnight or all day for eating at night time

Swedish meatballs - mashed potatoes or egg pasta or boiled dill potatoes - lingonberries- cucumber salad beet salad

I've been struggling in this area since February- we cook but I have been wasting money on food that I don't cook bc I have been really busy -

My biggest fault is planning a complicated dish and then when it comes time to cook it I don't have time and then I just throw something together- and plan on making the dish the next day and it starts all over again - thank goodness dd younger has been making beautiful unusual and delicious dishes

blessed, this thread is getting so long! I think you should be the one to make any decisions about it and of course no rush or even necessity to do anything. Do you think it would be fun to see it hit 50 pages, for instance (4.5 more pages), or 500 posts (55 more posts)? And then have a celebration and start a new one? Maybe you'd like to see how long it can get! :D That's cool, too. We could still celebrate passing the big numbers.

I just wonder if it would seem more "current", and maybe get more attention, if it had a "start up" to call attention to it every once in a while. Even a year at a time, or perhaps seasonal.

I'm not a cook, and shouldn't talk much! But here are recent ponderings from my kitchen.

Interesting to me that you even think you have a fault regarding complicated dishes, since you know you CAN create complicated dishes and have in the past many times - it's just the time issue. I would have trouble with attention span, probably.

I can also admit my recent fault/concern: I need more really healthy suppers in our "lineup". ;)
I've determined a couple things I need:

1) A go-to, very healthy homemade stir-fry sauce (or two)
2) A go-to, very healthy homemade salad dressing (or two)

so I am exploring some on-line and book recipes for these.

3) (less important) ways to use variety veggies, like cauliflower and eggplant, in healthy dishes

Many people say they find cauliflower quite satisfying when cooked, in the way white potatoes are, but of course much better for blood sugar. So I want to check that out.

Gosh I'm so sorry I haven't been back d Harriet - my dd younger has been cooking and it's been lovely - so different from what I cook - mostly vegetarian and delicious

She really has turned into a fine cook

D Harriet - I've tried the cauliflower route but it still tastes like cauliflower to me lol

Great idea on having go to recipes!!!!

I think we should go to 50 pages - how fun!!!

Dd younger has been using a couple cook books and her own recipes that are very tasty - some out of my comfort zone - but is really good! She uses Jaimie Oliver's last two books - Donal skehans fresh book and the happy pair book as well as an anti inflammatory book bc of her autoimmune CRP S disease -

Ds younger was at work today so I made dinner

Salmon brushed w olive oil - w cumin s/p garlic powder oregano and cayenne patted deep in and baked on grill in oven at 450

Served w a brown rice salad w balsamic/olive oil dressing along w arugula and blanched asparagus - parsley

Topped w a mango salsa - mangos- green onion - red Thai chili pepper- cilantro - cucumbers- lime juice and a bit of olive oil

blessed that sounds wonderful. Impressed with your dd for checking out anti-inflammatory recipes - inflammation is where we can nip so much poor health in the bud.

I also had a brown rice - with my stir-fry last evening. Joel Fuhrman's recipe.
The point was to make a vegan stir-fry sauce we might like - experiment. Dates were the sweetener - I haven't worked with dates much, but it was easy. The base was nut milk and I think I made a mistake using cashew - should have used a thinner one like almond or coconut. HRH was disappointed it wasn't a brown sauce and seemed "milky" - he wants to add either oyster sauce or fish sauce next time, which of course keeps it from being vegan, so I wouldn't add much or I might as well just buy something packaged and save work, lol. Vegan oyster sauces have MSG, so that is out. Ran across the interesting tidbit that Buddist monks consider oyster sauce vegan since the oysters are removed and you just have the "essence".

Anyway, it was good enough this time to eat and ponder. :) And this morning, HRH's blood sugar was excellent. So I said, AHA! and what did your wife cook you last night? And he said, "Something I didn't like much, so I didn't eat a lot. I'm sure that's what did it." He appreciates me so much!
