last night crepes (getting the hang of it - after 5 weird stuck to the pan shaped ones 8-) )
filled with onion, spinach, ham with sauce
dh likes mushrooms - so I sautéed mushrooms, onion, thyme, chicken broth and a bit of left over wine until the broth disappeared.

dd younger's salad dressing.. vinaigrette
on arugula, with beets, goat cheese,

yesterday I made a traditional dish and a nice salad.

today: I hope I can make tomatillo sauce, I have chicken kabobs from butcher, I have all the ingredients for a simple beef soup for lunch (I had made the broth earlier this summer and just defrosted it). I have left over meat from yesterday and still some pasta dough from yesterday for it as well-

I also want to make some banana bread and carrot cookies

used left over meat (made little meatballs in the soup), broth, left over noodle dough, and mir poix with tomato paste and made a pretty decent soup. Also made a salad - check- left over scraps used up :D .

last night: sausage, warmed up poached eggs (earlier on had them on ice water) (spinach) on english muffins (quick hollandaise-found a quick way without the double boiler - put metal bowl directly on low heat and as you whisk you take the bowl off so it doesn't over heat and then put it back on the heat) w/o all the butter - some but not the gobs that they ask for) oranges on side.

I have a cut up chicken in the fridge for tonight

coming with a different attitude towards cooking - all summer it was a chore - and I put too much thought process in
Now: I know it's temporary - my attitude has been its just something you do -

yesterday was grocery shopping day and I decided to buy a roasted chicken... thank goodness I did bc I ended up with feeling sick and needed to sleep.

chicken with mushrooms and pino and sherry cooking right now. (I wanted to make dinner early since we will be at funeral late this afternoon)
farro/butternut/onion/chicken broth casserole/bacon topped with parmesan

dinner made (except for frying the schnitzel- all breaded etc. and ready for tonight - lemon slices in bag) - I have never made schnitzel before but I saw tyler florence making it yesterday and it looked easy).
red cabbage (Jaques Pepin my favorite), Just needs heating up
green bean salad with french family dressing
spaetzle with parsley and butter (just needs heating up)

for uncle: put schnitzel together for the young man to cook, red cabbage, boiled potatoes with butter and parsley
d mil: same

also made a plates of yesterdays mushroom chicken (ina garten) , and faro/butternut squash dish (Ina) /canned green beans for uncle

with girls gone my cooking is nilly willy. simple stuff if at all.

My d mil's helper is going to teach dd younger about African cooking - dd is thrilled. I found a restaurant near my uncle and bought the helper (who is wonderful) Jollof - a traditional dish and when I went in to pick it up the whole restaurant smelled amazing. I am looking forward to the cooking adventure.

uncle has been a challenge re: food. He loves brought in food even if it's not that great. Yesterday I stopped at a german restaurant and it was not great! he raved about it... now if someone brings in a homemade dinner he doesn't want to eat it. I may be a stinker for this, but I am thinking of putting dinners in take out containers - picking up food for him all the time is a hassle especially since he is so picky. I know my cooking isn't bad and dd youngers cooking is like my grandmothers...fantastic but he turns his nose up at anything he thinks is home made. The problem with getting food that is take out is that it is so much and he won't eat it the next day and tosses it up.
