Hi, blessed! Again you are preparing dishes that are out of my league and sound wonderful! Thanks for corn salad ideas.
Our rearrangement of fridge to have produce at top continues to work well. I highly recommend being able to look straight ahead and see the truth about age of your produce!
Friend of HRH's hopes to be entertained at our house soon with a meal of pintos and cornbread. HRH happened to mention it, and he hasn't had cooked-down dry beans or homemade cornbread in years, so that will be a nice lunch together one day.
Tonight's supper was half wild rice and half the Jubilee rice I mentioned before. With it we had frozen not-chicken
with strips of bell peppers and a purchased teriyaki sauce. Perhaps this sauce was a little sweet - hmmm - but we both had second helpings.
Yesterday was a stir-fry of with some of the wonderful veggies my farming dcousin has been sharing with us. I held the scallions out until the last and used them more as a garnish. It was very attractive. I think it was the bright circles of carrots against the dark greens of other veggies that made it so pretty. Also the fact that this was a dark colored frying pan. Don't usually use it but see that for a dish that will be served in the pan, a dark pan really makes it look sophisticated. It was gone, down to the last bite, within minutes, lol.

Knowing what you will have later... ... hmmm..... now that IS an advanced concept, blessed!!!
I did work on this EDITABLE weekly menu planner and print out one idea of potential week's menus for us. It's on my fridge. But HRH is an extremely spur-of-the-moment guy about food. Possibly to do with many years of digestive troubles. He will often consider the very thing he thought he wanted to eat and change his mind.
But this planner page did do what I wanted for us, in that it got down on paper our basic go-to favorites and spaced everything out more in rotation, than with any chance of getting tired of an item. Also visual reminders of how to use leftovers, that sort of thing.
For us, the first decision is usually what the starch should be - rice, potatoes, pasta, beans, etc. And then we add the veggies interestingly around that.
Tonight I will suggest pasta with onions and peppers cut into the sauce, but I'm flexible!

Ended up making Swedish meatballs - donal skehan - I like his recipe- made my own gravy - egg noodles- cucumber salad w/o sugar- Brussels sprouts- lingonberries

Making donal skehans squash (actually diced sweet potato) spinach, chickpea (garbanzo beans) filo pie from his Fresh cook book - I'll let u know if it was good or not

I bought dd younger Donal Skehan's Fresh cookbook yesterday - I have the Irish version but he just came out with the American version.
Tonight soup - (I have leeks, carrots, celery left and some cans of beans and tomatoes)
I am out of lettuce so no salad -
I should go to the store but I don't wanna
