What do you call the bread or rice mixture that goes in the cavity of a turkey, chicken, or pork chop or steak pocket.

According to the Elton Brown on Food Network if it goes inside the bird/or other meat it is stuffing. If it is cooked in a pan it is dressing.
This comes from his Thanksgiving Special on how to Roast a Turkey.

I voted for the "stuffing" because that's what my family always called it . We always have made bread stuffing and put into turkey, chicken or pork chops. Any of the fixins' that was left after stuffing we baked in the oven in a casserole.

We've always called it stuffing when we stuff our chickens - so that's what I voted for.

I would call it stuffing if we stuffed it in anything, but I have never actually eaten a turkey or anything w/stuffing!
We only do dressing. The question here is, do you want your dressing soupy/moist... or do you want it dry, almost like cornbread. DH & I vote for dry. DS likes it moist, and unfortunately for dh & me, so does most of my side of the family.

DH's mother makes very good dressing though. My mom makes very good dressing, but for some reason, my aunts always make it for my side of the family.

I call it:
stuffing if in turkey, chicken, etc.
dressing if in a casserole
filling if in turkey, chicken, etc. (it is a hold over from my dgma who lived in Pennsylvania)

We too call it 'stuffing' if it's inside something and dressing when it's not.

I didn't pay attention to the poll and only voted for stuffing. But we also call it dressing. I think, growing up it was dressing, and now it is stuffing, probably due to the influence of TV.
I think regional differences get homogenized by TV.

Bingo. That's why I didn't know how to vote. It has been "stuffing" at our house ever since dd28 fell in love with Stove-top Stuffing when a little girl, and always called it that from then on, whether her grandmother's homemade or what. So I think my answer is skewed. I THINK my grandmother used to say, "dressing".
