Tieguanyin (simplified Chinese: 铁观音; traditional Chinese: 鐵觀音; lit. 'Iron Guanyin') is a variety of Chinese oolong tea that originated in the 19th century in Anxi in Fujian province. Tieguanyin produced in different areas of Anxi have different gastronomic characteristics.

The tea is named after the Chinese Goddess of Mercy Guanyin, Guanyin is an embodiment of Avalokiteśvara Bodhisattva. Other spellings and names include "Ti Kuan Yin", "Tit Kwun Yum", "Ti Kwan Yin", "Iron Buddha", "Iron Goddess Oolong", and "Tea of the Iron Bodhisattva". It is also known in its abbreviated form as "TGY".

There are two legends surrounding this tea, the Weiyin Legend and the Wang Legend:

Weiyin Legend (The Divine Reward)
A poor farmer named Wei Yin faithfully cleaned a neglected temple dedicated to Guanyin, the Goddess of Mercy, for many years. In gratitude, the Goddess appeared in his dream and revealed the location of a hidden tea shoot behind the temple. Wei Yin cultivated the plant in an iron pot, discovering that it produced an exceptionally sweet, fragrant tea with leaves so heavy they sank like iron. He named the tea Tieguanyin to honor the Goddess who rewarded his devotion.

Wang Legend (The Scholar's Gift)
A scholar named Wang Shiliang accidentally discovered a unique, wild tea plant growing near a large rock formation in Anxi. He cultivated the plant and later presented the processed leaves as a gift to the Qing Emperor Qianlong during a visit to Beijing. The Emperor was so deeply impressed by the tea's heavy weight, dark color, and divine aroma that he officially named it Tieguanyin, comparing its appearance to iron and its grace to the Goddess Guanyin.

The processing of Tieguanyin tea is complex and requires expertise. Even if the tea leaf is of high raw quality and is plucked at the ideal time, if it is not processed correctly, its true character will not be shown. This is why the method of processing Tieguanyin tea was kept a secret.

sun withering (Chinese: 晒青; pinyin: shài qīng)
cooling (Chinese: 晾青; pinyin: liàng qīng)
tossing (Chinese: 搖青; pinyin: yáo qīng)
withering, this includes some oxidation. (Chinese: 萎凋; pinyin: wěi diào)
fixation (Chinese: 殺青; pinyin: shā qīng)
rolling (Chinese: 揉捻; pinyin: róu niǎn)
drying (Chinese: 烘乾; pinyin: hōng gān)
After drying some teas go through the added processes of roasting and scenting.

trissie thanks for the start. I had never heard of that tea. I like reading Chinese legends in the morning.

Sunny morning, after some rain. I just emailed payroll to let them know I'm staying home one more day. DS7 is still sleeping and I think he needs it. MrNG left for another day of training, tomorrow he will be home and can keep an eye on DS7 if he's still sick.
I need to get moving, also a phone call re job application. I feel a bit unwell, I hope I didn't catch the bug.

Good morning Trissie and thank you for starting us off. We did get steady.rain all afternoon.and evening yesterday, with some heavier downpours. One water butt.filled.almost.completely, so I was standing out in the rain yesterday evening filling all the watering.cans!

I'm glad DS10 arrived at his destination safely, FFB. Im sorry DS7 still isn't feeling quite right yet, - another day at home will probably do him good (although it's difficult.for you, of course.)

I hope your doctor's appointment goes well today,.Dogged. Over here, I think there's a number you can ring if you don't have a GP, and they will.allocate you one, so no one should be without a doctor, but the quality can be variable. It's also a lot easier to move practices than it used to be. So far, we're very happy with our new practice,.and it has the big advantage of being within walking distance.

I hope DD's x-ray is clear,.L.Ann.

Helia, so glad you got to see Baby I during your call. That's a big step for DD30. Over here, we do have several communities of Anglican nuns.

Gma, you're so kind to your tenants,.ensuring they settle in well.

Very, very interesting and helpful suggestions about how to manage when DH retires. We are going to have to have a talk, as there are some things that need to be done, and which I need uninterrupted time for (like the end / start of month banking, account reconciliation, budgeting etc). Maybe I could move this to the first Monday of the month ? Then he would know it's.going.to happen and would expect it. And maybe when he's retired.I could use the desk in the spare room for this?

Yesterday's admin work has spawned a few more tasks :roll: but I'll get to them later today. Upstairs is now clean and tidy, and I have a new pile of donations. (I need to bag them, and walk them over to the charity bank when I have a reasonable amount.)

Today is going to be similar weather-wise to yesterday, but it's not raining yet. DH has gone for his.walk, and I think I need to follow soon!

kittykatt it seems very wise to anticipate right now the organization you will have with your DH later. IMHO it seems fair that you can both use the desk space when he retires - and probably that you have access to the desk on days he is at the office...

DS7 is up, he ate a bit of breakfast and took a good dose of antibiotics, then we made origami (cranes). Then he was so hungry he couldn't wait until lunch time, he is eating sandwiches of pâté with pickles.
Beofre he was up I had a phone interview for the possible new job. Not sure my answers were all great, but it's done, the HR lady was nice, she will now transmit my file to the recruiting team. One question was "could you start mid July?" and technically, I could, so I said so - but it feels too close, so part of me hopes it won't start that early (the same part of me hope they won't recruit me :roll: I'm not comfortable with change...).

Enjoy the quiet part of your day, L.Ann!

FFB, origami cranes sound fun, and WTG getting a phone interview. I totally understand no liking change (I'm the same), but some change can be good. :D

I have plans for the desk. DH currently has it set up exactly as he needs it for work, with multiple monitors etc, so there isn't a huge amount of space left. Also, and more importantly IMHO, it wobbles. Badly. Which would drive me nuts if I had to work at it. But I have a plan. When DH retires, MJ will be coming round to brace it so it no longer wobbles (he did a very good job on my cabinet, so I have every confidence in him!). I shall then be requesting a more equitable division of desk use! :D

This morning I've been out in my front garden, dodging the heavy showers. Freddie has eventually had a walk, (he didn't want to go at first, he preferred to lie like a log across one of the stairs, and,.to make negotiating then staircase even more tricky, with his tail out straight, instead of curled round him!) and I've also had a short walk. I didn't want to go too far from home,.as the showers are sudden and sharp. Next is lunch, and then I must start my housework.

Hi L.Ann, I hope Little Bit has a good time at camp and you have a lot of quiet in your day.

kittykatt, I know, change can be good and I want to change jobs. But the process of change is something I find tiring. We are weather twins, short showers and sunny spells. Oh, and a wobbling desk would absolutely drive me crazy. It makes sens that you wait until he no longer needs it professionnaly, to have it fixed in a way you can then both use it.

I did a few things. Now a break with Japanese green tea. Or maybe the tea isn't exactly Japanese, but it's called Sakura something so it's supposed to be Japanese style. (with aromas and petals)
DS7 is definitely on the mend :D He's doing acrobatics on the couch and playing Mario Kart and loudly celebrating his successes.
