SHREDDED ZUCCHINI PATTIES
INGREDIENTS:
1 small to medium sized zucchini
1/4 cup shredded Parmesan cheese
1 egg
Salt & pepper
1/2 tsp dried garlic (I would have used garlic powder if I didn’t have the dried garlic granules)
2 TBSP flour
1 cup Mozzarella cheese
Olive oil
DIRECTIONS:
Shred zucchini with the skin on
Spread zucchini out on a plate & sprinkle all over with salt. Let sit for 10 minutes
Put zucchini in a colander & press liquid out with the back of a spoon.
Put zucchini in a bowl & add Parmesan cheese, egg, S&P to taste, garlic, & flour. Mix well.
Drizzle some olive oil into a large skillet & heat on medium heat. Divide zucchini mixture into 4 portions & add to skillet. Press each into the shape of a flat hamburger patty. Cook on both sides, flipping a few times, until brown.
Add 1/2 cup Mozzarella cheese onto one browned patty. Place another patty on top. Repeat with remaining two patties & rest of cheese. Cook until melted, flipping once.
NOTES: Makes 2 large patties. Half of one was plenty for one serving.
Get as much liquid out of the shredded zucchini as possible. Patties were a little hard to flip without the edges falling off. I don’t think I removed enough water using just the colander, & will also wring zucchini in a towel afterward next time I make this.
Shredded zucchini with liquid removed will freeze well for 3-4 months.
