Happening in the kitchen
I am looking for a place to gather my thoughts and plans for food prep. We will see how this goes.....
3/25 -
** Hard boiled eggs. I made 7 eggs on Sunday, and they were gone the first day. Today I will make 14 hard boiled eggs and observe how long until they are eaten.
** Spaghetti - DS16 has been requesting this. Today is the day to make it happen.
** Baked potatoes - We have zero ready to eat. I only have 4 potatoes available to cook. I will be getting more Wednesday. Wait or cook the few I have on hand? Having loaded baked potatoes is a favorite around here so waiting seems wrong.
** Rice - rice bowls is another favorite and so easy to make when ingredients are available. Last time I cooked white rice and it went well. Today I will cook Spanish rice.
** Fish - The shrimp is gone so I need a different fish option. Today I will cook some fish filets I found in the freezer. I didn't realize we still have fish that Tommy caught & shared with us.
** Summer Squash - pulled a package from freezer. It will be ready to eat after thawing
** Beef thawing. It will be hamburger patties with cheese.
** Lettuce - chop a couple more heads.
Ready to eat -
** Protein - ham, crumbled bacon, pepperoni, hot links, Variety of yogurts
** Carb - Low carb tortillas, low carb bread
** Vegetables/fruit - lettuce, tomatoes, bell peppers, cabbage, spinach, summer squash, Cinnamon apples & Raisins
** Cheese - Cheese dip, Laughing cow spreadable, American slices, Shredded = sharp cheddar, Mozzarella, Flaming Jack Colby/Monterey
** Drinks - Greek yogurt/protein powder/blueberry smoothies, protein shakes, coffee, tea

In the kitchen here (and thank goodness I'm not feeding two teens!):
Dh is out bowling so will eat on the fly between here and there or after. We still have leftover lasagna and have frozen eggplant parm. Also precooked burgers from Costco and have a type of Arnold's bun that they could go on.
Dh ate what was leftover of the chicken last night with his breakfast. I was hoping to have it today but it's okay. I think I should probably grill some for the freezer that could be taken out and used as needed. We need groceries soon, I'll probably order tomorrow when I have a class all day again. I wanted to wait until close to my departure so I could stock up on things for dh.
I'll cook again tomorrow night.

I have chicken to do something with or the ddoggo will get it as I did not eat it
and had take out yesterday. { BS is good & on target today yea! ]
Possible activities:
Make mini pizzas four baking now. Done & took 3 of em to the basement freezer.
Boil eggs
Mix up more rolls to freeze./ Made pizzas instead.
Mix up cake to freeze for potlucks at church in the upcoming Easter season.

** Tomatoes from the garden are being thawed. Not sure what I will do with them. I enjoy eating them plain or adding to a recipe. Hum....decisions...decisions.
** Prepare smoothies in pint mason jars - greek yogurt (100g), Whey protein powder (36g) and water. I usually prepare 5-7 drinks at a time. When I am ready to drink it then I add some frozen blueberries. They thaw quickly in the drink.
Ready to eat -
** Protein - ham, pepperoni, hot links, Smoked sausages, Greek yogurt, lemon yogurt, Hard boiled eggs, tuna salad

I got the country style pork ribs thawed out & cut in half.
Put in crock pot on the deck once the frost melted.
Put pizza sauce over the seasoned meat.
Green beans will be a side with a roll.
That's cooking now ~ walked after that.

Nancy - your food prep sounds wonderful. The mention of pizza sauce reminds me that I have a partial jar of sauce that needs to be either used or put into the freezer to prevent it from spoiling.
