LadyM so lucky to have that asparagus! I assume dkids don’t eat?

Our supper is lamb chops and corn on the cob grilled, and a green salad.

Hi!

Today (Wednesday) we had a shake'n'bake pork chop. We also had green peas and I had some sliced potatoes that I fried along with onions, olive oil, butter, pepper and paprika.

Also between now and Sunday night, I would like to use up the frozen salmon filet pieces for one meal (most likely Good Friday) and I have a frozen cottage roll to defrost and cook, I'm also thinking grilled cheese and soup because we can't have a huge meal every night. I might make a turkey thigh on another night. (Just giving myself ideas if I come back to read this between now and Monday.)

After we had the rice pudding tonight, dh sat there and praised my cooking and how much it has improved over the years. He told me "don't tell my mom, but you are a better cook than she is" then he told me I'm the best cook he's ever lived with, including his third wife, who was Portuguese and made lots of spicy things, which he loves.

Reminder to self, there is a baguette in the freezer.

I woke up to an almost empty refrigerator with minimum ready-to-eat food available. It still astonishes me how quickly food can disappear.

Ingredient prep today =
** Asparagus = harvest, wash, eat some and put the rest into the freezer. No one will eat asparagus except for me. :( My goal is to grow enough during April & May for me to have asparagus available the entire year. This year I am doing it different by cutting spears into 1" pieces before freezing them. I don't care for whole asparagus spears that get limp.
** Lettuce, romaine = wash & chopped
** Chicken teriyaki
** Mac & cheese (double recipe)
** Dinosaur chicken nuggets
** Biscuits
** Fish caught and gifted by DFriend
** Hamburger meat out to thaw.
** Cheddar & flaming Jack shredded cheese out to thaw
** chicken noodle soup (canned) and crackers out on counter for DD13. She isn't feeling well.
** Sandwich meat = sliced turkey
** Cheese dip. Used with tortilla chips or over the top of loaded baked potato.
** Hard boiled eggs (14)- will probably make deviled eggs from most of them.

Still learning new stove!
Changed out the burners.
I am delighted to have an oven lite!
Cooked my egg for breakfast 2nd day.
Boiled up eggs to use later.
Baked a loaf of bread.

I didn't get everything done in the kitchen that i had planned for yesterday, so some of this is carry-over.

Ingredient prep today =

** Fish fillet sauteed
** Cheeseburger patties
** Hard boiled eggs (14)- will make deviled eggs from most of them.
** Baked potato - yes again today. DS16 goes through them quickly by piling them up for loaded baked potatoes.

I have sancky type foods I cooked up yesterday.
And when the stove was out.
cottage cheese
boiled egg
peanut butter
Fast so I could play with new additions to the craft room.

We are entering into a new phase of life. DS16 and GF are interested in shopping and cooking together. I want to encourage those activities & life skills 1000%. I have authorized DS16 to use the CCard at grocery store to buy whatever ingredients they want to cook and eat. I suspect this will not only inspire them to learn how to shop & prepare food, but I am hoping their excitement about doing it will lead them away from eating so much fast food. They are expected to clean the kitchen after they finish cooking.

The new stove is so shiny and clean. Every part of it works well. I find myself touching it in appreciation each time I walk into the kitchen and give thanks for having a working oven again.

I asked for menu ideas for Easter meal. I got no request. The downside of having good food that we like available is it doesn't seem special to have it for a holiday.

I took time this morning with the spreadsheet that I use to track food. I wanted to make sure it was completely updated. This information provided by the spreadsheet is slowly developing into something that I had no intention of tracking when I started creating the spreadsheet. I am going to let it develop naturally without pushing it in one direction or another. If the information isn't useful then I don't want to spend my time and energy tracking it.

Posting for accountability. I did update the food spreadsheet today.

We have an abundance of ready-to-eat food available after the weekend. We will be eating from this supply today.

Need to eaten or tossed (approaching the expire date) =
** Catfish fillets
** Oikos greek yogurt

Food spreadsheet updated.

I have an overload of protein in the refrigerator ready-to-eat. 9 choices. I have assigned an expiration date to each one so will keep an eye on those dates to make sure the food doesn't stay in the refrig too long. There is a small chance of that happening, but food can get overlooked and expire if not monitored.

Next up - focus on getting a good selection of carbs available. I'm thinking potatoes, rice and pasta. I haven't decided on what dish to make with each type of carb yet.
