tonight meatloaf, some sort of potato dish, salad and veggies - its been so nice to cook for many instead of 2

I love tomato soup from a can!

tonight we are having chicken, brown rice, salad and veggies.

Meat pies h. Was disappointed when I changed the menu and he did not get that last night glad to know he was looking forward tomthat on the way home.

sometimes that happens.

I will have to try meat pies for d family one day d nancy.

today: try for lunch a mediterranean chickpea salad

dinner: frittata, good salad, cut up fruit (save some for d mil)

I got back to planning meals on sunday. a good thing as I am cooking for my family and others.
Knowing that someone won't eat if I don't make it is a good thing for my scattered brain as it makes me plan.

the other day we made a lentil dish by ina garten that was very good with copper river salmon which was simple and elegant all in the same dish.

today: I am hoping to make a couple meals for a d family member

As I am joyfully responsible now for a 2 different families outside of our family so I have to plan and cook ahead.

make grandma's salad dressing and lemon parmesan dressing.

learned that all the prep is draining and cooking multiple meals in one day really is tiring and hard to clean up after. So I am trying hard to do prep the a couple days before I cook to see if that helps.

Dinner planned for this week: the next day - items are dropped off for their families.

Sunday: pizza decided.
Monday:Wedding soup, 1/2 sandwich, tomato bacon salad, applesauce with pears
Tuesday: Stuffed shells with italian sausage, zucchini yellow and green saute-ed with onions and basil, and topped with parmesan a bit, arugala salad with beets, goat cheese, dried chopped cherries, almonds, avocado and balsamic vinaigrette
Wednesday: french toast blueberry casserole, oranges cut up, left over applesauce
Thursday: stopped by the fish place yesterday and they had fresh snapper and another fish: fish taco's (was fantastic - I made a grilled one on top of the stove by curtis stone and tried fried taco fish recipe from martha stewart, along with sour cream/adobo sauce, etc) It was really good and the grilled one is so easy to do. I will list recipe later on.
Friday: stuffed chicken breasts pre-made from local store, potato fans thyme or rosemary, green beans and lemon butter, mediterranean salad.
Saturday: x
Sunday: chinese out

January 27 to February February 2

no menu planned yet but because of freezing weather I went to the store early this morning and bought things I know I would use.and I have things left over.. now to plan
+ put aside dinner for 2 other family members.

Monday: beef: salisbury steaks with mushroom/onion in port and beef stock, potato fans with rosemary or thyme, salad, parsnips and carrots in a apple cider/maple syrup, rosemary glaze (sounds difficult but was easy to make).

Tuesday: enchiladas with left over chicken, refried beans, chipotle Caesar salad, fruit (make for dfamily outside for breakfast - banana bread from left over bananas, rice for meal from yesterday, for us: blueberry granola bars - coffee cake bread for freezer and outside d family.

Wednesday: chili – cheese, onion, pico de Gallo, corn bread, southwestern salad, changed as they ate the chili I made the night before ;) ended up making homemade gnocchi in pesto cream sauce with cut up tomatoes, bought meat balls from local italian place (didn't need it), bruschetta on garlic toast bought from italian deli, salad, fruit

Thursday: nachos - chips, taco meat, chorizo, cheddar, green onion, tomatoes, sour cream, cilantro, salsa hot and mild, avocado, olives, hot sauce

Friday: soup out of a can, grilled american cheese sandwiches or ham and swiss sandwiches, cut veggies and dip


I would like to try making duck next week, potatoes anna, loose leaf salad all from laura calder

last night we had the beef: salisbury steak by america's test kitchen, parsnip and carrot with apple cider, a tablespoon of maple syrup and rosemary (tasted like thanksgiving), bag Caesar salad, and potato fans with thyme or rosemary. actually the veggies and potatoes were much easier than I thought!

I have a pound of leftover ground round (they gave me too much than I asked which will benefit us). - so today I will make chili for tomorrow as we are out in the evening. the only thing I have to buy tomorrow is a crispy bread and have cut veggies and dip, some fruit.

we had the day before yesterday gnocchi with pesto mixed with cream and cut up tomatoes topped with parmesan
I burnt the asparagus wrapped in domestic proschuitto
fruit

yesterday nachos with all the fixings

tonight: plain old tomato soup from a can - cut veggies and dip - thinking grilled cheese or ham and swiss cheese

today is my menu planning instead of sunday
