ree drummonds corn and cheese chowder with roasted chicken from store corn bread or biscuits, - easy - we added jalapeno for ours

? on biscuits; what is your favorite biscuit recipe and do you use butter, crisco or both -

pretending its summer: going to have a picnic in the house: Brats cooked in beer and grilled - cooked onions browned, dijon country mustard, --potato wedges baked in oven with herbs de provence s/p and garlic powder and a little olive oil - (ketchup for those who want it) , broccoli steamed - then put into butter cooked garlic , apple and pear sauce

I have been wanting grilled burgers! They are having a pot luck at church sun maybe they will make up some.

last night poached eggs, I made a blender hollandaise but d kids want me to eat healthy so I have to stop doing this type of thing. fresh fruit

dd older is making smoothies of just fruit and ice for us to have at night in fridge.


tonight: 2/7/14 chicken quesadilla (onion, mixed peppers) and pico de gallo spelling who knows lol - (make extra) for outside family members (without jalapeño) - was very good: ree drummond: chicken breasts s/p and patted with taco seasoning. I used a bit of olive oil and cooked the breast 3 - 4 minutes each side... it still wasn't done so I threw it in the microwave for about a minute - let it rest with foil on top. put a bit more olive oil even a touch of butter in pan and saute 1 onion sliced and what ever color peppers you have (multi color is perfect). Chop the rested chicken. Ree Drummond - then puts the tortillas on a griddle and uses cheese (monterey jack cheese) on bottom then chicken - then veggies- top with cheese- and tortilla and turn quesidillas when ready - serve with pico de guillo - we didn't use all the cheese but used cilantro as flavoring and dkids liked the tortillas baked. served with pico

Per doctor suggestion and daughters suggestion I have to move to a plant based/whole grain diet more than I protein - meat based diet and I have to cut my dairy . . Boy its hard.

for lunch I had mushroom cap cooked, onion cooked in microwave, basil, thick sliced tomato, millet bread 1 piece and dijon mustard (I unfortunately had one piece of provolone) - it was very good. surprise.

Saturday: I had a super headache so dd younger made a chicken dumpling veggie soup for me, dd older made the tuna for her and her sister.

trying to find balance regarding plant based diet. I think, with my tendency to go all or nothing; I have to use my S.H.E. learned skills to keep me in balance. When I go all out (trying to change all at once), I fail because I can't keep up with it.
my thinking:

-add veggies and fruit to my day but continue my cooking skills - I know i can't give up meat all at once or dairy all at once but I can use it for taste especially since I have multiple people to cook for. I can still cook normally and increase our veggie part of the meals. I have 2 outside family members who do not like most veggies - so I have to be creative. I think my SHE side will love the creativity. I just have to not obsess or over think the process - I tend to go into obsession mode and then I get stressed. The Goal is balance.

I am trying to continue working on my cooking skill but do it healthy wise.

cooking today:

Sunday: Us. chinese Flank Steak and snow peas (not my favorite recipe but kids liked it) - green onions , brown rice (foil package of veggies)

Outside family members
Sunday: (for outside family: I bought a jenni-o chicken that I have to cook and save remainder in freezer in 1 serving sections for future outside family meals) potatoes anna, baked tomatoes slices with pesto and parmesan)
Monday: flank steak from above, fruit, white rice
Tuesday: Ham/cheese dijon Sandwiches, fruit, cut veggies with dip

Fish & salad last nite.
Val. Day week so not changing much till after that.
I try to keep meat to one meal a day.
Why are you cooking for so many outside fam. Blessed just wondering?

elder care for two different families. its actually a joy as long as I do prep ahead of time.
