Happy to be posting in H and F a very good day today. So often I get just so far with Healthy Habits but have to admit the whole day doesn't stay that way.

Lucylee: next time you make the corn bread, try making it with the milk/vinegar substitution. I discovered how well it worked when my unopened carton of buttermilk was already sour, days before its "best before" date and I had already mixed up the rest of the ingredients so needed to proceed. Dh googled the substitution for me and I tried it. The recipe, buttermilk biscuits, was a success. And since it has been a success 2 more times, it was more than dumb luck the first time.
I'm off to bed now. Made an excellent roast chicken for dinner. Dh helped clean up and we talked on the speaker phone with my senior friend while we worked. Then I wasted the rest of the evening researching the building we are seeing tomorrow. It is an interesting situation, a condo building mostly sold and days before they were to move in, the builder and financier pulled the plug on the original purchasers and gave them back their deposits (but not a refund for the upgrades they had paid for.) Since then (4.5 years ago), it has been mostly empty. Not sure where the original purchasers are with their law suit but the builder is no longer in business.
The building has been renamed and is being marketed by the realtor I'll be seeing tomorrow. Near as I can figure it, only 1/3 of it is sold. Don't know if the rest of the units are empty or rented. I do know that the realtor has the whole penthouse level for sale/rent. We're renting so this might be an opportunity for us. Or they may not be willing to wait until May for us to move in (the earliest I'm comfortable taking the place.) I'll report more tomorrow.

Thanks for the tip, Kathryn. Would it work w/skim milk? That's all we ever buy. I know one thing... if I ever use up all this cornmeal, next time I am going with cornbread MIX. * shaking my head *

Ended up doing too much laundry, as usual. I also cleaned the kitchen sink. Mike is very happy and he seems to enjoy the occasional "turn on some music and clean" day. I would love to be able to talk him in to it more often.
We are possibly expecting company either this week or maybe next. No set date, but every little bit helps and if nothing else, this place will sparkle before we leave on our 28 day cruise in about a month from now. This same person and his friend have been invited in the past, but never seem to be able to actually get here. That's all right with me. They are friends of Mike's and they are coming on a day that I will be working, so all that is required of me is to keep this place in almost-readiness.
Time to hang up the rest of the laundry.

Harriet I forgot to mention that I really like chickens with smaller combs less is better in my opinion.
