put together some easy chicken (ree drummond) - take chicken breasts (deboned/skinless) s/p and season with a package of taco seasoning to your taste. very good. easy - chop it up and make quesadillas if you want

very tasty.

didn't have to make dinner for others today...
so in other words...yay.

I have lol enlightenments - One of the d family members I have been cooking for loves canned, powdered, frozen anything which has tons of salt - I took a container from a can and put it in the bowl.. my d family thought it was yucky and and too salty... I had to laugh - I fed it to this sweet person because I thought once in a while I can do something for their palate without sending them to the hospital by giving them pre-packaged food every night. His response made me giggle - "that was the best meal; it was delicious" - if ego was the problem I would have been hurt, I am sure, but I laughed so hard. Boy that would make my life easy if I can just give him packaged goods. lol. Its all about perspective and what you are used to. lol.

tonight: stuffed cabbage head (really good.. it reminded me of my grandmother's cooking... from Julia and Jacques stuffed cabbage. (makes it easier if you cut up the ingredients before hand... needs two hours to cook but then you have the kitchen clean.. lol I wish. - it only uses 1 pound of ground beef. I will make this for my family on my side.

Make brown rice for the week. hard but have to remember EAT MY VEGGIES

dinner tonight:

- dd younger asked for mahi mahi (easy call) dip the fish in milk then in blackening spice (turn the vent on high) heat oil.... cook on all sides and if need be cook remaining time in oven - serve with lemon - 2 ounces me

dd older loves tuna and they had a 2 inch piece of tuna left (smaller size) so brushing the tuna in sesame oil and dipping it in sesame seeds salt and pepper and sautee at medium higher heat just to sear and leaving the inside raw.

salad celeriac
green bean salad (still have some)
tomato must be used - lay out tomatoes with basil oil/balsamic vinegar put on red onion thin and basil sliced thin - s/p

Monday
Broccoli sharp cheddar cheese soup with veggies
green salad w vinaigrette and scallions
slice bread or bread bowls for d kids and d family outside of the house or cornbread with red/green/yellow/orange/jalepano peppers

Tuesday:
baked ziti (made the day before) bake small ones for outside family (me 1/2 a cup to 1 cup)
iceberg lettuce wedge

Wednesday: Left overs.

The other day I made corned beef, cabbage, potatoes and carrots in a crock pot for outside family (so it is already to drop off)

Thursday: thinking vegetarian

Friday: make beef with stout for the weekend in crock pot,

Blessedw2 ~ Thank you for posting the link to the cooking show with Julia & Jacques. I enjoyed that very much. Your menu for the week looks wonderful.

thank you d book. Actually I thought the cabbage might be hard to make but cutting things ahead and having the foil ready really helped. It was really delicious -

I have such a joy for cooking... Yesterday and the night before my time disappeared to be at home and I ate pizza one night and last night I had a lunch date and a dinner date and way over ate and felt really yucky... not worth it... so back to real cooking for my family.

thinking about next week.

I made tonight Jacques Pepin's crab cakes with avocado salad - very easyhttp://www.youtube.com/watch?v=8uq1xft4zck(I added old bay seasoning to the mix) and served it with a lime aioli... really lime zest, lime juice, s/p and mayonnaise which was really good. REally good and easy

my thoughts for next week:

mushroom barley soup - onion soup (why - because I have barley to use up and onions and stock, cheese to use up)
I still have italian sausage, brats, hamburger meat, chuck roast, ground pork, a whole chicken, chicken bone parts, peaches, blueberries, peas in freezer.

I also need to use up one spaghetti squash

my eldest is not eating dairy foods (little is okay but thats it) as it bothers her and she eats lots of vegetables and fruit. so I am taking away things for her and for other members outside the house that are on restricted diets I am adjusting things. Also I have set limits to making too many meals that are not what my family eats... I have had dh purchase something and then I set up dishes for the outside family so I am not giving all my time away. I also have a couple frozen things in the freezer that are pre-made from other meals for them.

today is clean the refrigerator day so that I feel a little more in control.

I found a bread making class in the city and I have decided to take it. I need some creativity outside my house and this way I can learn to make multiple things with out putting too much time aside. I also don't have to dirty my kitchen :D
