chicken, tian of eggplant, zucchini and tomato, cauliflower au rotten oh.. gratin
dd younger made some fantastic scones.
yesterday: lunch: lemon yogurt mixed with one container mixed fruit.. really good

I made an impulse buy - a juicer furumph... dd older juices all the time... what an impulse buy.

I have an onion carrots and celery for crock pot soup of some sort for dinner.

tonights dinner:
we made different but similar stuffing for deboned pounded chicken breast - we had one base: mushroom, onion, basil, garlic, s/p sautéed
dd younger added steamed squeezed chopped spinach, parmesan and some cream cheese and mixed it well to be rolled with chicken
- then dipped the rolled chicken breasts in egg and then in a fresh bread crumb mix: in food processor: 4 slices no crust white bread, s/p, dried parsley and a couple tablespoons basil oil.
- then baked at 400 degrees until done

cauliflower au gratin

zucchini provencal: fancy way of saying: zucchini, onion, mushrooms, red pepper, garlic sautéed until onions are translucent then add dry basil, tomato paste (to your liking), s/p and toast the tomato paste for a few minutes, add about a quarter cup red wine and let evaporate, add a can of tomatoes (cento) and let cook for about 10 minutes stirring every so often... top with parmesan

tonight (but made earlier today)
dd older gave up all dairy for lent but I have leeks to use - she said she could make something on her own so that I don't have to worry about her

I have leeks and potatoes to use up so
roasted potato and leek soup
parmesan crisp - just parmesan grated in a circle more or less on top of parchment paper and baked
not fried spring roll with just vegetables (may get dd older 2 shrimp for this)
green bean salad (have to use up the beans

I am going to make sables (butter/salt cookie) to bring with down town tomorrow, and pack a small cooler with fruit and veggies and water bottles for munching at night

oldest dd wants to learn how to cook the basics of veggies - how to etc. cut and do etc.

family wanted corned beef and cabbage tonight. I ate that Saturday (out) and really don't feel like it but since everyone wants it... that's what it will be. dd older did the shopping.

so tonight.
Irish soda bread for d mil
corned beef, cabbage, potatoes, sauce on side - horseradish mixed with butter
