What's for Dinner?

bacon lettuce and tomato sandwiches. I have to make 2 dinners for family outside our house. I have been thinking of giving a man near our street a meal once in a while. I called the police for a well check as his car never moved all winter (he lives on a different road) and they said they checked on him in January and in March but I wonder who is feeding him. I have to think about it as I worry he could take it the wrong way.

tonight: making pork roast (I don't like pork) but it makes enough for many who do. Pork roast wrapped in bacon and sage/s/p/and garlic put in slices inside meat. Meat thermometer was right... but I think it's too dry. The pork now a days doesn't need so much cooking. I cooked it before the thermometer rang -(medium pork is said to be 160 and I took it out of the oven at 152 but the temp kept going up to 163 - next time I will have to take it out much sooner.

I also had to make another meal which (was nothing special) a shrimp dish (I don't eat shrimp but even my d eldest thought it tasted like salt water shrimp... I wonder if they brine the shrimp... I have had this before at this place.

last night we went out to eat.. 70 I couldn't afford sitting on my charge card. (I have to pay taxes, dd younger's graduation stuff etc.) . so back to real life again
tonight: Root salad with goat cheese

tonight: tuna sandwiches and soup.

lack of focus has been getting in the way of my cooking yesterday I slept all day and then the kids were on their own. I still have to make a couple dinners... I am considering it a failure not to cook for outside family members but I think I will buy already made food. I noticed they don't seem to notice if I make it or if I buy it which is okay. I think we are going to have a picnic here. (barbaque)

made spanakopitas last night with fruit. easier than I thought. I will make them again for an appetizer

sweet potato fries baked with steak rub on them

Chicken tequila grilled lime on side. Pico de gallo and tomatillo sauce on side
Corn pancakes
Salad with ranch chipotle dressing bought

loved the tomatillo sauce
corn pancakes were okay - d kids liked it especially with the tomatillo (I wanted something different for corn dish...but you fry the corn pancakes in oil and pancakes wicked up a lot of the oil. I think I would have rather have corn bread instead of the corn pancakes.
