I will be honest I haven't cooked - we have been on the road a lot and haven't ate at home for quite awhile (and I am gaining weight with each meal out of the house).

I am re-learning how to cook for 1 to 2 people. I haven't had time to do my usual exploring my cookbooks and learning new skills but that's okay.
I just have to figure out how to be creative in smaller numbers.
I no longer have to cook for others outside of my home for now which is really nice.

Blessed.... I know it is not easy to cook for just two people. That is a problem dh and I had after we became emptynesters. Most of the recipe books have recipes that serve four to six servings, and we freeze the extra servings for another meal later in the week or whenever a quick meal is needed. That is one way we avoid eating out all the time.

sorry I haven't been here in so long and sunny I deeply apologize that I didn't see your post until now!
dinner for New years day
beef tenderloin - herb garlic mayo, horseradish sauce, steak sauce on side,
beef burgandy and buttered noodles with parsley - I am not sure about number of people coming... I would make chicken for the group but dd younger made her coq au vin the last time.
braised shallots and port
beginning: different sizes of small campari and varied colored small cherry type tomatoes, basil, garlic toast, small mozzarella and cream mozzarella with balsamic vinegar s/p
homemade garlic bread with herbs
carrots sauteed with parsley and butter
zucchini/corn/basil/cream by martha stewart. a bit of fresh lime squeezed and stirred in
fruit -
Presecco with strawberry puree strained with grand marnier and simple syrup
Dinner was a success

we have been eating left over beef wine stew
I froze beef tenderloin for alsatian meat patties when d kids come back
tonight: making spanakopitas as I have phyllo dough defrosted and spinach leaves that need to be cooked.. I will freeze the extra for another time.
