dd younger took a 3 evening class for baking and made some beautiful cakes.

grilled deboned chicken breasts in spicy marinade: chili powder, pinch of cinnamon, garlic, oil, paprika, salt, mexican oregano, brown sugar.

will have with corn tortillas, pico de gallo, tomatillo salsa made early
avocados, greek yogurt or sour cream

salad with corn, black beans, green onions, tomatoes, olives black (save some for lunch tomorrow). cook up the remainder of tortilla's sliced in oven with a touch of oil for tomorrow's lunch on salad.

Yesterday my local store had ramps (strong spicy garlic flavored spring wild plant - a small leek but not mild like a leek) - I have always wanted to try them - they were pretty cheap for a once a year foraged plant. $2.49 a nice bunch
I bought the local homemade pasta from our local italian deli. Chopped the whites off the leaves and chopped both separately. (washed and dried already). - heated some olive oil and put in chopped whites of the ramp then added the leaves, salt, red pepper flakes and sautéed - turned off heat and covered until pasta was done. Threw pasta drained into olive oil mixture and tossed adding a bit of really good olive oil and parmesan grated fine. Some people put bread crumbs in the dish - a few teaspoons but I don't care for that.

also had some italian bread with bruschetta (from same store)

I would love to buy the morel mushrooms they have there but at $64.99 a pound... yikes - a 3/4 filled pint basket is $25

If you ever have the chance to make ina gartens ribs - please do... they are delicious - if anyone needs the recipe I will put it here. very good

with dd younger working I am back to cooking

tonight: chicken breasts in barbaque marinade, green beans, large salad with vinaigrette ... peaches for desert

dd older bought pizza for us so last night that's what we had 6/18

Mango salsa lettuce wraps 1 small per person 6/19 couldn't make as dd younger ate the mango lol
zucchini fritters 1 - 2 small per person v
balsamic dijon garlic grilled chicken breast
garden strawberries ... sweet and tasty

saturday: Frittata with fried potatoes spinach and onion.... salad
Sunday: Pear salad

picked up my csa veggies from the Gentleman Farmer ... nice challenge for cooking

I picked up this weeks veggie co-op and it has beets, chives, lettuce, cabbage,zucchini and other things... now to come up with menu's - my d mom came with me and loved it.

i am thinking grilled fish taco's with coleslaw
beet salad and goat cheese

steaks tonight. made rice with chicken stock, onion, garlic, zucchini 2 colors

pasta salad for tomorrow

My money is very tight the remainder of July; in other words my menus will have to be creative but cheap.
