summer is ending and the weather is a bit cooler. d mom has been home all summer and without dad we have been eating out almost every night. my cloths seem tighter than usual lol.
I am back to cooking for others - hard though bc this sweet persons diet is so limited and can't have salt/tomatoes/lemons or any citrus which I would use to add flavor to cooking. So wish me luck.
first soups w unsalted broth... mmmmm to add flavor: thinking veggies and herbs (parmesan has to be separate meal when they have meat)

blessed, your menus sound so delicious and so gourmet! I cook much plainer. Good luck with the cooking for another. All I remember from cooking for a dialysis patient is no raw veggies and to soak the potatoes to get rid of some minerals (Potassium).

thank you for the advice on cooking for dialysis patients!!! I never knew about the potatoes until you told me. I told her that she had to soak them for 2 hours. I didn't know about the raw veggies... I will tell her - thank you!!!
I spent a couple years learning techniques (one of those goals I wanted to learn) as my grandmother was a fantastic cook. I would love to go back to my grandmothers village to learn traditional foods as I have lost that skill a long time ago.
My cooking is done for her and dropped off in her freezer. It feels good to have that done. I cooked for 5 days straight and dh did alllll the dishes after me. what a sweet heart!
tonight: martha stewarts frittata with zucchini, leeks goat cheese and basil. onion soup without the cheese and bread.

my mom is gone this week so I started cooking again.
I made a stuffed cabbage (jacques pepin) yesterday
tonight- stock enriching, onion soup/roasted potato soup for freezer and dinner
ham and cheese sandwiches or a nice salad
tomorrow use the beef from the stock with dijon mustard, french bread, salad - apple tarte
make appetizer for wednesday - spanikopita and greek salad bites - (bring to party) and have some for family

Bc of small budget this month we r only eating out once when we go to the Christmas play
Made enough soup for freezer for a holiday meal
Today since I'm home make chicken stock for freezer
Make gourgeres for tomorrow for group appetizers
Roast chicken plan- Brussels sprouts (on sale) - acorn squash roast w olive oil - chile powder etc - w side of Greek yogurt mixed w a bit of siracha

Yesterday I tried a couple different versions of stuffed eggs regular- reg w tomato paste and smoked paprika (best liked) and cucumber, dill, caper and Greek yogurt - good but the liked the tomato better) on weekly d extended family - from Martha Stewart's new appetizer cook book- also tried the stuffed BLT tomatoes (too much work)
Tonight - I still have left over broccoli, Brussel sprouts, wow exciting - not- so I might make chicken pounded and throw in some onion, mushrooms, thyme and what ever wine is around
Saturday's plan buy sloppy joes from local pizza place - best sloppy joes I ever tasted and it's super cheap

I made dinner each night now that my mom is back in Florida - I made extra for freezer and soon I have to go back to cutting recipes in half again - thank goodness as I got migraines again and then a cold and couldn't cook for a couple days
I have chili in the crock pot and then ill make some cornbread muffins w bacon scallion and cheddar thrown in - it was excellent- just heated up rolls instead
