Re: Happening in the kitchen
LM / Thanks for that idea of putting pizza sauce in the freezer.
I got a few things at the market.
Needed cheese for the pork burritos I had meat left over so I"LL make up some of those to have on hand and freeze up.
Got some of those made up and in the freezer now.
Thanks for this thread it is inspiring.
I have corn bread mix on the counter to inspire me.
Woke up thinking of biscuits & gravy yesterday but did not make that,
I got blue berry muffin mix too.
I use the jiffy ones they are smaller works for me.

This information in kept in spreadsheet that includes date purchased and date expired. I don't attempt to show that here because too much information to put into easy-to-read phpbb format. Having knowledge of what date a food will expire helps keep the inventory rotating and lets me know when to remove it from the available items to eat.

Re: Happening in the kitchen
I cooked an egg for my breakfast.
I put half of my 2 serving meat pie for a meal today.
I have soup thawed up.
Made up the cornbread this morning , it's for the dog treats for her.
So pleased that she came and got me when it was done I had turned off the oven but
she could smell it was done!

Re: Happening in the kitchen
Spreadsheet updated and removed items that were eaten yesterday.
Reviewed what foods will expire in the next few days.
We have a suitable selection of protein, carbs, fruits, and vegetables ready to eat. I'm not cooking anything additional today.
Ingredient prep today =
** Asparagus washed

Daily maintenance=
** Spreadsheet updated by removing items that were eaten yesterday and adding food that came into our home in the last 24 hours.
** Sort foods in categories so they can be reviewed as individual groups. Protein, cheese, carbs, fruit, vegetables. Does each category have a good selection of ready-to-eat foods?
** Sort foods by expiration date. Review and create plans to use food before expiration.
Ingredient prep today =
** Asparagus washed. Eat some and put the rest into the freezer
** Blueberries repackaged so they are easily accessible since they are used daily
** Tomatoes out of freezer and packaged for easy access.
** Tuna prepared
** Chicken tenderloins cooked
** Romaine lettuce chopped
** Vegetable medley assembled and sauteed - spinach, cabbage, cauliflower, okra, onion, tomato, mushrooms, beets. apples, peppers. Package into individual servings.

Re: Happening in the kitchen
Success! Yea! the pork roast turned out so good!
I added veg. at the end.
Cut it in 3 pieces to fit in the cast iron dutch oven better.
Now I am letting it cool off too freeze up for meals later on.
Some other things to put in the basement freezer in the morning
after I do this separating & shredding part.
I think it's the first time I've done one of these.
