I enjoy the challenge of tweaking foods to meet the recommended amounts of micronutrients. Because my goal is weight loss that means the additional challenge of keeping calories low as possible. ANYWAY, I've recently made a couple changes that moved my numbers into an improved micronutrient range.
Fiber = Even with eating a half dozen or more vegetables/fruit each day, I could not get my fiber up enough to meet the standards. I went looking for a solution and have found an easy one. Just eating 20g (about 1/4 cup) of
Fiber One Bran Cereal raises my fiber count into acceptable level. I was surprised that I enjoy eating a few pieces as a crunchy snack all through the day. Bonus is that it doesn't trigger a response from my body to the gluten.
Omega-3 = Adding just 10g of walnuts was enough to get this into acceptable range.
Adding these two daily foods resulted in an additional 113 calories. That may not sound like much but it is comes out of my "whatever" calories. I try to eat food that is nutritional for about 80% of my calories and eat whatever for the other 20%. Making these 2 changes means that now I am more at 90% nutritional food and 10% whatever foods.
