Salsify Sunday

Salsify is a root vegetable belonging to the dandelion family, salsify is also known as the oyster plant because of its similar taste when cooked. The root is similar in appearance to a long, thin parsnip, with creamy white flesh and a thick skin. In the same way as many root vegetables, salsify can be boiled, mashed or used in soups and stews, and is also a good accompaniment to poached eggs
Salsify is in season between October to January. The best salsify for culinary purposes is firm and smooth, preferably with the green tops still on.
To prepare salsify, scrub the root under cold running water, peel with a sharp knife and place in water with a little lemon juice.
To cook salsify, peel the root, then cut into short lengths and simmer for half an hour until soft. Drain, then sauté in a little butter. To store salsify, refrigerate in an airtight container and use within one week.

B oth salsify and skirret are new to me . Never heard of them, never have seen them in produce section. I slept hard for 3 hours, now can't get back to sleep, so just dropping by.

Hi Gma, sorry for difficult sleep.
We are back from our two weeks in Belgium ( + NL + Luxemburg + Germany), arrived yesterday just before midnight, exhausted, lots to do of course today. Fortunately I have Monday off as well. School starts September 1st. I need to cuop !
We enjoyed most of the trip. The second week (the one in the South of Belgium) was less enjoyable since DS7 had some kind of fever (virus) for four days, starting the day happy and then "declining" before noon with high temps. As a result the only thing we saw n Luxemburg was terrible traffic, underground parking, a disappointing lunch that he didn't even eat a bite of, and the panoramic elevator for DS9 and I, so a very disappointing day. Same at Bastogne War Memorial, we had a picnic near the Memorial but never saw the museum because the poor boy was like a zombie and asking to go to bed.
I hope everyone is doing well here, I'm not sure I will have time to cuop. There is literally a pile of things to sort and clean up and put away (camping stuff).

Is DS feeling better, FFB? Where did you go in the Netherlands? Good luck with all the catch up work. Glad you don't have payroll tomorrow.
Bama, I think you asked about my dh's first language. It is Dutch. He is from the Netherlands. He's been in the US so long now that at this point his English is better/ more mature than his Dutch. He goes back every year to visit his sisters. The kids and I go back with him about every 2 years.

I'm up but feeling like I didn't sleep enough. Not sure I'll have time today to nap - it's CG2 Sunday which means I'm scheduled for all but maybe 3 hours of the day between church this morning, CG2 3:30 - 6ish and then hosting Sunday dinner 6 - 9-ish. All good things!

Both Lyme disease and alpha gal are all over the east coast helian. Doxy can be hard on your stomach. Make sure you drink a lot of water or maybe the chocolate milk trick.
