Whitebait refers to small, young fish that are often caught and eaten whole. They are typically no longer than a few inches and are known for their delicate, mild flavour and tender texture.

The whitebait concept – very small fish cooked and eaten whole including head, fins, bones and innards – is recognised all over the world but is applied to different species reflecting what is or was available locally. In most of Europe, whitebait are young sprats and the sprat is a small cousin of the herring.

On this basis a whitebait should be between two and three inches long, and whilst they will normally these days be young sprats, other similar fish have fitted the bill in the past including young herring and sardines (both closely related to sprats). Sprats are caught all round European costs including the Baltic, Mediterranean and Black Seas. The two main sources in recent years have been the Baltic and the Black Sea.

Good morning, everyone, and happy Wednesday! I'm still getting the dreaded 503.error message, but less than yesterday,.and it was much easier to log in this morning. For reference, it's about 6.45 am BST.

Our big news is that DH spent most of yesterday talking.to a very knowledgeable NHS pension expert, and I think the figures. are very nearly sorted out.I.didnt realise the scheme had changed around 10 years ago,.so He's been advised to take the main pension now amd the other one after the start of the next financial year in April. It's going to make things a little tight for 6 months, but we'll have his lump sum in case of any unexpected large expenses. In the meantime,.I know he wants.to change the car for a new to us model, (which makes sense, as ours has.got to the.stage where essential parts are starting to drop off /go wrong.) That will probably be in the new year. And he's mentioned replacing the freezer - something we had intended to do earlier this year, but the Adventures of the Washing Machine took over. Anyway, he seems a lot happier, so that's a good thing.

Being realistic, there's no way everything can get done by the end of this month,.so it looks like he'll be retiring the end of October.

So, today, he's off to the office, and I'm at home.
