Last night was macaroni and cheese, sausage links, roasted carrots, and applesauce with cinnamon.

last night chicken breast with lemon and capers, (still can't get that right) and steamed some spinach slightly - good
today: dinner: salad greens with goat cheese, dried cranberries, beet slices, almond slivers, red onion slivers, avocado pieces and balsamic dijon vinaigrette

Take out chicken on cheap chicken Mon. meal here.

making turnip and potato (scalloped) with rosemary steeped milk(for tomorrow's lunch) I have walleye for tomorrow evening, asparagus, cauliflower. (I am following the no carbs at night suggested by the book by bob harper and I feel better already for it. it's only been a week.
also making tomorrow: baked beet chips as a snack
tonight: chicken, cilantro, avocado, onion, salsa, lettuce, tomato, a touch of cheddar, lime
I have tuna for the next lunch or night.

lunch: I had the walleye (left over for tomorrow)
potatoes and turnip scallop, salad
tonight beet salad with goat cheese, dried cranberries, red onion, etc...
dessert: cook some rhubarb and strawberries together.
33.8 perrier water - I have been drinking one a day. pop is usually 1.00 (diet) so I find this at 1.59 a large bottle is about the same and still cheaper than starbucks
lunch tomorrow: carrot slaw, cauliflower, seared piece of tuna with asian dressing. carb: brown rice 1/2 a cup.
lost 2 pds. this week.

dessert: cook some rhubarb and strawberries together.

I don't want to eat tuna for lunch... I will have it for dinner along with the cauliflower, spaghetti squash and sauce
dh loved the walleye so it's gone.
I need a non cooked lunch (frustrated right now with the healthy eating plan so I will give my self one afternoon off but still eat healthy)
I woke up hungry at 2 and tried to put it off but had cereal. I had a subway meatball and really not as good as real food but it's out of the way now. I think the next time I get the urge to have a non healthy lunch I would rather go out.
I made beet chips (not the same as potato chips)
making all these veggies have been hard but I do feel better.

I have to make oatmeal for tomorrow as I am too lazy or too hungry to cook first thing in the morning.
Snacks available already made
fruit cut up
rhubarb/strawberry/apple cooked together (maybe put in yogurt) a little tart bc of the rhubarb though.
cauliflower steamed already
Lunch: 3 oz burger with tomato, lettuce, grilled onions - dh bought burgers and onion rings... why did i not cook and why did I eat those onion rings
make cucumber salad and carrot salad for fridge
dinner: lentils salad with carrots, celery, onion and vinaigrette dijon dressing
had left over chicken breast and veggies.. a junky dinner but oh so easy.

Today I have to plan meals as dd's come back tomorrow.
my healthy eating IS paying off, even though I really dislike it sometimes - I mean reallllly dislike it. my mind wants comfort food with tons of cheese and cream cheese and tons of carb items - noodles my favorite (I am sure out of habit)
okay now that I got that out of the way.
I have to make 2 quiches for Easter today: (I don't want to spend my morning picking up dd's at airport and cooking being stressed and then not cooking at all which wastes tons of money because I go out and buy what I need) I love to cook but deadlines make me enjoy it less (I do this sometimes... when I have a dead line)
So make: onion and bacon quiche plus carrot and leek slivers dijon (reg and country) quiche
