april 1 - making beef stock this morning
cooking to me is like doing crafts. I love to learn new things all the time. (I learn even when it doesn't come out good lol)
made chicken fajita w guacamole, cilantro, tomato, salsa on corn tortillas
April 2, 2013 Tuesday
breakfast: smoothie oatmeal, soy milk, strawberries, banana
lunch, crusty bread with fig jam and herbed goat cheese and prosciutto (I was surprised how good it was). 1/2 orange for dessert
dinner: onion soup with crusty bread for dd and gruyere cheese under broiler, green bean salad (made ahead), 1/2 grilled cheese: brie or cheddar, caramelized onions (made ahead) bacon (made ahead) slivers.
veggies for snacks already made: beet salad

Bean soup was my plan for dinner tonight but it was too warm. So we had left overs. It's supposed to rain later on in the week so we can eat it then.

for wednesday:

ann burrell's bolognese - meat sauce with pasta (for dd) (really good - I highly recommend this recipe) and me spaghetti squash - salad (make in morning)
make apple muffins for freezer

dd a chicken breast (flattened with s/p) , me a piece of halibut (salt/pepper browned on both sides - tossed in oven to finish cooking - with avocado lime pesto (really fast: throw everything in a food processor and bingo it's done)/ avocado half, oil, scallion, smashed garlic, cilantro, basil, 1/2 lime juice with pulp, salt and pepper.
regular salad - with sundried tomato dressing (1 T sundried tomatoes, red wine and balsamic vinegar, scallion, garlic, oil s/p)... also easy - throw in food processor - croutons... cut up bread with the oil from the sundried tomatoes and salt (tossed) and baked to croutons level. simple fast (I put it on spinach salad)
freeze meat sauce
freeze stock after reducing it
toss anything out of refrigerator

trying my hand at olive crackers (I am part of French Fridays with Dorie group)(dorie greenspan) where we make something from her cook book for every Friday -
lunch:leftover pasta and onion soup, green beans left over
Smoothie: apple, banana, strawberries and soy milk and oatmeal snack
dinner: we got pizza

yesterday's olive sable's challenge (French Friday's with Dorie) well not my favorite - It just tasted like a sweet cookie instead of a cracker - dd younger liked it a lot but I think it was because it was sweet. I also tried making the Marcus Samuelson's appetizer with date seeded, with cream cheese and a bit of blue cheese mixed together inside the date with an almond in the middle and wrapped in smoked italian ham - I don't like blue cheese so why I tried it well I never will know - it would be good if you liked blue cheese but I can take that off my list. (I'll make it for the family members who like blue cheese)
today: dinner: salad with poached egg and a couple bacon pieces (already made) for dd and myself, dh and I fish with lemon and toss in some capers, dd left over pasta and meat sauce
lunch: left over chicken on sandwich, avocado (half sitting in the fridge, jarred red pepper, pesto in jar on french baguette (I buy that every other day as it's cheap and fresh)
today: dinner: salad with poached egg and a couple bacon pieces (already made) for dd and myself, dh and I fish with lemon and toss in some capers, dd left over pasta and meat sauce

wooo I love chili and I love hot dogs.. combined... sounds delicious d nancy...
dh and I went out for lunch at olive garden, gosh I haven't been there in I don't know how long. So we ordered dd younger something as well so she is eating that.
so tonight: a chicken dumpling soup which is simple and light.
my grocery store is no longer carrying the apples I like (macintosh) darn.
today is menu planning and challenge planning.

tonight home made tomato soup with sundried tomato croutons (croutons cut up toss with a TBL or so of oil from sun dried tomatoes and a bit of salt - then toast in the oven), a nice salad (strawberry tomato salad), cheese sticks (puff pastry rolled out, grated parmesan/s/p I like herbs like thyme rolled lightly, cut and turn then bake)
