tonight: beef tenderloin cooked to 140 deg. salt/pepper, olive oil and butter on outside (on the side mayo whipped with basil and roasted garlic) (thought I would have more people tonight now we enough for sandwiches or salad)

Salad - 2 cooked corn kernels only , 1 roasted red pepper chopped, black beans 1/2 can rinsed, 1 T jalapeno from a can, 1/2 chopped tomato, avocado chopped (put in when about to serve), cilantro chopped , 1/4 cup red onion, 1 lime, olive oil, red wine vinegar s/p salad.

for lunch: some french bread with thin slice fresh mozzarella, some basil pesto, thin slice roasted red pepper (jarred) tomato slice, arugula, chicken breast rotteserie (spelling) 1 chicken breast split between dd and I, (me an slice of avocado) I also like basil blending in mayo instead of pesto. dd younger had a hankering for pesto.

cucumber slices

Dinner fondue: with steamed veggies and bread cubes. fondue was way too rich for my liking. I like my d mil's one that is not at all healthy but is loved by all the family:all 25 of us. hamburger meat browned and drained , lots of cheddar cheese, plain old canned tomato sauce, burgundy cheap red wine, cornstarch - and bread cubes for dipping

------------------------------------------------

The dorie French Friday challenge this week (Friday) is: "goat cheese and strawberry tartine: 12 slices fresh baguette sliced about 1/3 " thick either left be or grilled/toasted" (if grilled toasted cool first so cheese doesn't melt), "about 3/4 cup fresh goat cheese" (seems like a lot to me but again this is for 4 servings (3 slices each)," About 16 ripe strawberries hulled and cut in half, coarsly ground or crushed black pepper, good balsamic vinegar (optional)"

"Spread the goat cheese over the bread and top each tartine (bread slice with a few berry halves" sprinkle with black pepper and finish with a couple drops of good balsamic vinegar."

I haven't tried this yet but I will let you know. I will probably just make one and let you know.

today: cook up the strawberries for the freezer so not to waste them.

make a kugelhopf (raisins are soaking in apple brandy as I don't have any kirsch)
tonight use up meat from the other day. I made fleshkeirla (sp) or left over beef ground mixed with minced onion, a piece of bread soaked in milk, 1 egg, s/p, and chopped parsley; then made into patties that are floured on both sides and cooked in oil till brown and flipped to other side and browned.

also made egg pasta and topped with the wild mushrooms: butter - saute mushrooms, add finely chopped shallots and cook until tender, toss in some wine (I added about 1/4 white wine but red wine will do, to deglaze pan, and a pinch of thyme cook down by 1/2, add a bit of cream then s/p to taste.

tomato salad: tomatoes, onions or shallots, parsley and a dijon balsamic dressing add basil shreds (if you want you can have this for lunch... just add mozzarella)

cook the beets, carrots, turnip and put in refrigerator for tomorrow or Sunday's salad.
