yesterday we had left overs or the kids had pizza in the freezer.

today: scallops salt and peppered (both sides) scallops s- cookcallops on med high heat (closer to med) with clarified butter and a touch of olive oil for 3 min one side and turn and maybe 2 minutes on other (check middle) .. remove - in pan cook shallot stirring for a minute toss in white wine, scrap bottom, add a bit of stock, reduce by half - add capers that are rinsed. season if necessary.add a tbl of butter at end to give it a little gloss. (sometimes for flavor I add some lemon slices from the beginning. pour over scallops.

packaged in foil:baby bok choy cut in quarters , snap peas, thinly sliced garlic and onion, orange zest, mixed by hand with olive oil/s/p place in foil - crimp - cook for 15 minutes at 400 degrees

spinach and aborio rice mixture recipe from dorie green span

Leftover queso dip with ground beef was great converted to a pasta casserole. All I had to add was some cooked rotini. That was Monday's supper.

Last night was very simple black beans and rice with a can of diced tomatoes.

Tonight I'm trying a new recipe for sweet & sour cabbage with Canadian bacon.

yesterday I bought a pre - made shepherds pie from Foodstuffs and a pre-made salad for dkids for dinner as I was away

tonight: making shrimp and pasta for d family, dmil and d uncle :D never will I buy raw shrimp that need cleaning again... I dislike shrimp anyway but cleaning them.. was gross. my family liked it... brought some for dmil - but to me it tastes gross. dd younger and I had chicken sautéed.

tonight: d kiddos are on their own. dd older will make chicken fajitas from the butcher already marinated as I won't be home.

Tonight planned leftovers of the chili we had yesterday. Great for the cold temps we've been having here.
