Matcha[a] (/ˈmætʃə, ˈmɑːtʃə/ ⓘ; Japanese: 抹茶) is a finely ground powder of green tea specially processed from shade-grown tea leaves. Shade growing gives matcha its characteristic bright green color and strong umami flavor. Matcha is typically consumed suspended in hot water.

Matcha originated through cultural exchanges between China and Japan in the premodern period, developing from earlier powdered tea practices in China that were transmitted to Japan by Zen Buddhist monks. During the Song dynasty, tea leaves were ground into a fine powder and whisked with hot water. This method was introduced to Japan by the monk Eisai around 1191, where it continued to develop even as such practices declined in China.

During the Muromachi period in the sixteenth century, Japanese tea farmers developed shading techniques to produce tencha (碾茶), the tea leaves used for grinding into matcha. This innovation contributed to the development of modern matcha, characterized by its vivid green color and rich umami flavor, the latter derived from theanine, distinguishing it from earlier forms of powdered tea. It also contributed to the development in Japan of new tea styles such as sencha and gyokuro. Traditionally, matcha was produced almost exclusively in Japan, although it is now also produced in other countries. In the twenty-first century, to meet the rising global demand for matcha, China invited Japanese specialists for technical guidance, introduced the necessary equipment, and has promoted mass production in Guizhou Province since 2018. While Japan still produces the finest matcha, the quality of Chinese matcha has been improving rapidly enough to be used in the food processing industry at more competitive prices.

The traditional Japanese tea ceremony, typically known as chanoyu (茶の湯) or sadō/chadō (茶道), centers on the preparation, serving and drinking of matcha as hot tea, and embodies a meditative and spiritual practice.[citation needed]

Matcha is also used to flavor and dye foods such as mochi and soba noodles, green tea ice cream, matcha lattes, and a variety of Japanese wagashi confectionery. For this purpose, matcha made green by color additives instead of expensive shade-grown matcha is often used.

Good morning, Trissie, and thank you for starting us off. I've never tried matcha tea - must be more adventurous! :D

KitKat, Indeed lists , so I ( hopefully!) remember everything I need to!

Dogged, I hope you're feeling less tired - are you drinking enough water? If your.weathwr is anything like ours has been, you start feeling dehydrated quickly.

Gma, I m glad the tenant left everything clean - so thoughtful, and makes things so much easier for you! You've had a busy day going between locations!

So... Monday again. We're supposed to have rain, ( one forecast has predicted a "wall of rain" across the SW, which I think may be an exaggeration!) and it's certainly much cooler. DH goes to the office, and I'm at home. I really.need.to.work on the house today, the kitchen in particular needs attention.

kittykatt, I really hope you don't get a wall of rain ! It's cooler here too.

trissie, thanks for the start ! I will have green tea later today to honor today's title, unfortunately not real macha. Fun SHEM, although I should say some people have to go to work and every Monday morning they ask themselves why ? And they don't find always find proper answers as to the meaning of their job.

So, a unusual Monday morning here, as DS7 is still probably a bit sick, and he's the kind of kid who could go to school looking fine and start vomiting around 11am...
We woke up at 5.30 to drive DS10 to the departure for his five day school trip, DS7 was woken up, went downstairs and complained about a headache, so MrNG decided he would stay home, made an online appt at 6.30 for 11.45, then around 7am he considered DS really didn't look sick, and then we somehow decided I would stay home with DS7 - MrNG has a training day with something he doesn't want to miss... Anyway, so from one minute to the next I wasn't any more in a Monday morning mode.

Good morning, FFB! I hope DS 10 has a wonderful time on his school trip. Sorry DS7 is still sick, but I see you're planning to make the very best use of a day at home with him. Over here,.kids have to be 48 hours symptom-free before they can return to school, to try and prevent sick bugs spreading through the whole class.

I'm staying upstairs amd out of the way while DH runs around getting everything ready to take to work (he's supposed.to.do this the night before, so we dont have this early morning rush!). No rain so far, I suspect the "wall" was the usual exaggeration (like the."snow.bomb" that is predicted very winter by the tabloids,.and almost never materialises). :lol:

kittykatt, I hope your DH is ready soon and you can enjoy a quiet house all day. As you say, DS7 would probably bring his bug to school, so it's better that he stays home. Still it feels like I'm cheating in order to stay home, just like him. I get half-pay on a "sick kid" day, I'm allowed 2 such days a year, or 3, I don't remember.

As I predicted, DS7 seems fine, he complains he's bored :roll: I think the day is going to be a long day ;)

Hi, all. I am feeling much more myself after all of that sleep.

It's funny that you should mention that, kitkat. I have been without a family doctor for almost a year, but just got signed on with a new one. My first appointment with him is tomorrow (Tuesday). I don't expect that there's much actually wrong with me, but if there is we'll know soon. :)

FFB, I'm glad DS is feeling better. I hope the Dr appointment goes well. If it's really difficult to concentrate, could you agree to , say, 30 minutes (with a timer,.so no arguing! :lol: ) screen time for DS7, to give.you some uninterrupted time.on the photos and taxes?

Dogged, I'm glad you're feeling better again. Sleep well until you're "proper" wake-up time(I can't remember.gow many hours you're behind the UK - 6?)

DH was finally successfully launched, and I've done several of those admin jobs on my list - each quite small, but together they are time.consuming. ( I'm still not sure how I'll schedule this when.DH retires :D )Next I'm going to do something small for me, amd trim and shape my nails - I like to keep them short because.of all the gardening and cooking I do. Then I need to do the banking, and then I'll finish my exercises.
